  • Roe (everyday boards): often the most approachable option, and you can usually build a beautiful presentation without spending “special occasion” money.
  • Sturgeon caviar (special occasion tins): generally starts at a noticeably higher tier and climbs quickly with premium selections and larger formats.

My practical rule: if you want the true “buttery and nutty” experience, buy a small tin of quality sturgeon caviar and serve it well, rather than buying a lot of inexpensive imitation and hoping it tastes luxurious.


Storage: high 20s to low 30s in your refrigerator

I keep it simple and strict: store caviar in the coldest part of your refrigerator and aim for the high 20s to low 30s Fahrenheit (about 28–32°F). Keep it as close to freezing as possible without freezing.

Gulf Coast tip: avoid the refrigerator door. Use the coldest interior shelf and keep the tin stable, away from temperature swings.

Shipping: overnight only, and never order at the end of the week

For true caviar, I prefer overnight shipping. I also avoid end-of-week ordering. If a shipment goes out Thursday or Friday and a delay hits, it can create the kind of temperature risk that ruins the experience. Mid-week deliveries are the safest rhythm.
