Recipe Name: Ono Island Southern Snapper with Cornmeal Crust and Lemon-Caper Butter
Serves: 4
Time: 10 minutes prep, 12 to 15 minutes cook
Best pan: Cast iron skillet
Ingredients
- 4 red snapper fillets (about 6 to 8 ounces each), skin on if available
- 1/3 cup fine yellow cornmeal
- 2 tablespoons all-purpose flour
- 1 1/2 teaspoons kosher salt (divide)
- 1 teaspoon freshly ground black pepper
- 1 teaspoon smoked paprika (optional, but very Gulf Coast)
- 1/2 teaspoon garlic powder
- 2 tablespoons neutral oil (avocado or grapeseed)
- 3 tablespoons butter (divide)
- 1 lemon (zest + juice)
- 2 tablespoons capers, drained
- 1 small clove garlic, finely grated
- 2 tablespoons chopped parsley
- Optional Southern side: quick skillet okra or sautéed greens
What to look for when buying red snapper
- Fresh smell: clean and mild, never “fishy”
- Texture: fillets should feel firm, not mushy
- Color: snapper flesh should look bright and translucent, not dull
- Skin-on bonus: skin crisps beautifully and helps hold the fillet together
How I prep it for the best crust

In a shallow bowl, whisk together cornmeal, flour, 1 teaspoon salt, pepper, paprika, and garlic powder. Lightly press each fillet into the mixture, shaking off any excess. You want a thin, even “kiss” of cornmeal, not a heavy breading.
Cast-iron sear (the Southern classic part)
- Heat a cast iron skillet over medium-high heat for 2 minutes.
- Add oil and 1 tablespoon butter. When the butter foams, the pan is ready.
- Place fillets in the skillet, skin side down if using skin-on. Press gently for 10 seconds so the fish lays flat.
- Cook 3 to 4 minutes without moving until the crust is golden and the fish releases easily.
- Flip and cook 2 to 3 minutes more, depending on thickness. Snapper is done when it flakes easily and is opaque.
- Transfer to a plate and tent loosely with foil.
Lemon-caper butter (fast, bright, and coastal)
Reduce heat to medium. In the same skillet, add the remaining 2 tablespoons butter. Stir in grated garlic for 15 seconds, then add capers, lemon zest, and lemon juice. Let it bubble for 30 to 45 seconds, then turn off the heat and stir in parsley.
Spoon the warm lemon-caper butter over the snapper and serve immediately.
