Ono Island Gulf Coast Tuna Steak Pasta with Capers, Olives, and Sauvignon Blanc

Orange Beach, Alabama is a great place to fish for tuna, and I love having a recipe ready that feels elevated but still easy enough for a weeknight. When fresh tuna is in season, I make this pasta with intention: bright tomatoes, capers, green olives, lemon, herbs, and a Sauvignon Blanc splash that keeps everything clean-tasting and coastal.

If you did not go catch tuna yourself, I suggest stopping by a local seafood store like the one under the Perdido Bridge and picking up fresh tuna steaks. This dish brings that Gulf flavor right into the kitchen, and it pairs beautifully with the simple, open-air lifestyle so many homeowners enjoy on Ono Island.

Ingredients 

  • 1 to 1 1/4 lb fresh tuna steaks, cut into 3/4-inch cubes
  • 2 cups small grape tomatoes, seeded, plus extra halved for garnish
  • 1/3 cup red onion, finely diced
  • 4 to 6 garlic cloves, minced
  • 2 tbsp capers, drained
  • 1/3 cup green olives, sliced
  • 1/2 cup Sauvignon Blanc (plus a splash more if needed)
  • 1/4 to 1/2 tsp crushed red pepper (to taste)
  • 2 tbsp fresh lemon juice, plus lemon wedges for serving
  • 1/3 cup fresh basil, thinly sliced or torn
  • 1/3 cup fresh parsley, chopped
  • 4 tbsp butter
  • 12 oz angel hair (or substitute 1 lb linguine)
  • White pepper (or black pepper), to taste
  • Parmesan cheese, finely grated (optional, light-handed)
  • Salt, to taste

How I Make It

1) Boil the pasta

  1. Bring a large pot of well-salted water to a boil.
  2. Cook angel hair until just tender (or cook linguine to al dente).
  3. Reserve 1 cup of pasta water, then drain.

2) Build the Gulf Coast sauce

  1. In a large skillet over medium heat, melt 2 tbsp butter.
  2. Add red onion and cook 2 minutes until softened.
  3. Add garlic and crushed red pepper; cook 45 seconds until fragrant.
  4. Stir in tomatoes, capers, and green olives. Cook 2 to 3 minutes until the tomatoes begin to relax.
  5. Pour in Sauvignon Blanc and simmer 2 minutes to reduce slightly.
  6. Add lemon juice, parsley, and white pepper. Taste and adjust salt.

3) Cook the tuna quickly

  1. Push the sauce to the edges of the pan to create a hot center.
  2. Add the tuna cubes in a single layer. Sear 45 to 60 seconds, then gently turn and cook 30 to 45 seconds more.
  3. Turn off heat and add the remaining 2 tbsp butter to gloss the pan.

4) Toss and finish

  1. Add the drained pasta to the skillet and toss gently.
  2. Use reserved pasta water a splash at a time to loosen and help the sauce cling.
  3. Fold in basil last so it stays bright.
  4. Serve with lemon wedges. If you use Parmesan, keep it minimal.
