I love a good steak night on Ono Island, especially when the air feels salty and still, and you can almost smell the marina timbers and bay brine drifting over from Old River. Prime beef already has that buttery, fine-grained tenderness, so I keep the seasoning simple but intentional. This “black beef rub” gives you a bold crust, a little warmth, and that steakhouse-style depth without overpowering the meat.
Prime steak does not need a complicated marinade. It needs a dry surface, a confident rub, and a hot sear that locks in a savory crust.

My Ono Island “Black” Beef Rub (Hardcore-Style Inspired)
This is the exact style of rub I keep on hand for beef. It’s modeled after the ingredient list you shared: sea salt, sugar, black pepper, garlic, onion, chili powder with cumin and oregano, and optional activated charcoal for that signature color.
Ingredients (Makes about 1 cup)
- 1/4 cup fine sea salt (or kosher salt pulsed a few times)
- 2 tablespoons granulated sugar
- 3 tablespoons coarsely ground black pepper
- 2 tablespoons garlic powder
- 1 tablespoon onion powder
- 2 tablespoons chili powder
- 2 teaspoons ground cumin
- 1 teaspoon dried oregano
- 1 to 2 teaspoons activated charcoal (optional, for the deep-black look)
How I Mix It
- Whisk everything together thoroughly.
- If you want a more even shaker blend, pulse 2–3 times in a spice grinder (do not over-grind).
- Store airtight up to 6 months.
Charcoal is about color. The steakhouse flavor comes from salt, coarse pepper, garlic, onion, and that chili-cumin backbone.
Prime Steak Night on the Gulf Coast
Ingredients (Serves 2)
- 2 Prime steaks, 1.25–1.75 inches thick (ribeye or strip are my favorites for crust)

- 2 tablespoons salted butter

- Pat steaks dry with paper towels.
- Season generously on all sides with the rub.
- Rest at room temp 20–30 minutes (or refrigerate uncovered for 2–12 hours for an even better sear).
Step 2: Sear Hot, Then Finish
Cast Iron Method (My go-to):
- Heat a cast iron skillet until it’s seriously hot.
- Add oil, then place the steaks in the pan and do not move them for 2–3 minutes.
- Flip and sear 2–3 minutes on the other side.
- Reduce heat slightly. Add butter, garlic, and herbs. Baste 30–60 seconds.
- Finish to temperature (use a thermometer):
- Rare: 120–125°F
- Medium-rare: 130–135°F
- Medium: 140–145°F
Step 3: Rest and Slice
- Rest steaks 8–10 minutes.
- Slice against the grain and serve.
My Gulf Coast note: If you’re grilling outside when it’s humid and breezy (classic coastal weather), keep the lid closed more than you think you need to, and trust your thermometer. Wind can change cook times fast.
Optional Steakhouse Finishers
- Herb Butter: butter + parsley + lemon zest + pinch of rub
- Quick Peppercorn Cream: cracked pepper + splash of brandy (optional) + cream reduced until silky
