Chicken Francese Recipe

Ingredients

For the Chicken

  • 2 large boneless, skinless chicken breasts, sliced horizontally into thin cutlets
  • Salt and black pepper, to taste
  • 1 cup all-purpose flour
  • 2 large eggs
  • 2 tablespoons milk or water
  • 2 tablespoons grated Parmesan cheese, optional
  • 3 tablespoons olive oil
  • 2 tablespoons butter

For the Lemon Butter Sauce

  • 3 tablespoons butter
  • 2 cloves garlic, minced
  • 1/2 cup dry white wine
  • 3/4 cup chicken broth
  • Juice of 1 large lemon
  • 1 teaspoon lemon zest, optional
  • 1 tablespoon flour, optional for a slightly thicker sauce
  • Fresh parsley, chopped
  • Lemon slices, for garnish

Instructions

  1. Prepare the chicken. Slice the chicken breasts horizontally into thin cutlets. Lightly pound each piece so the thickness is even. Season both sides with salt and black pepper.
  2. Set up the dredging station. Place the flour in one shallow bowl. In a second bowl, whisk together the eggs, milk or water, and Parmesan cheese if using.
  3. Coat the chicken. Lightly dredge each chicken cutlet in flour, shaking off the excess. Dip each piece into the egg mixture so both sides are coated.
  4. Cook the chicken. Heat olive oil and butter in a large skillet over medium heat. Add the chicken cutlets and cook for about 3 minutes per side, or until golden and cooked through. Work in batches if needed. Transfer the chicken to a plate.
  5. Make the sauce. In the same skillet, add butter and garlic. Cook for about 30 seconds. Add white wine and simmer for 2 to 3 minutes, scraping up the browned bits from the bottom of the pan.
  6. Finish the sauce. Add chicken broth, lemon juice, and lemon zest. Simmer for 4 to 5 minutes. For a slightly thicker sauce, whisk 1 tablespoon flour with a small amount of broth before adding it to the skillet.
  7. Return the chicken to the pan. Place the cooked chicken back into the skillet and spoon the sauce over the top. Simmer for 2 minutes until the chicken is warm and the sauce is glossy.
  8. Serve. Garnish with fresh parsley and lemon slices. Serve with pasta, roasted vegetables, mashed potatoes, or a crisp green salad.
