Ono Island Piña Colada Recipe
A Creamy Pineapple Cocktail with an Optional Aged-Rum Float
There is something about a frozen piña colada that feels perfectly at home on Ono Island. Perhaps it is the combination of pineapple and coconut, or maybe it is simply the way a frosty cocktail tastes after a sunlit afternoon on the boat.
I love serving these by the pool, on the porch or when friends gather after a day on the water. The cocktail is creamy and tropical without being overly complicated, and the optional aged-rum float gives it a beautiful presentation and a little extra depth.
Whether you are welcoming neighbors, hosting a casual coastal dinner or settling in to watch the sunset, this is an easy recipe worth keeping nearby.
Meredith’s Ono Island Piña Colada
Makes 4 cocktails
Ingredients

1 can (13.5 ounces) unsweetened coconut cream
-
6 ounces white rum
-
2 ounces simple syrup
-
3 cups frozen pineapple chunks
-
2 cups ice cubes
-
Fresh pineapple wedges for garnish
-
Optional: 2 ounces aged or dark rum for floating

Optional: toasted coconut, cocktail cherries or fresh mint
A Quick Ingredient Note
Be sure to use unsweetened coconut cream, not cream of coconut. Cream of coconut is already heavily sweetened and will create a noticeably sweeter cocktail.
Using frozen pineapple adds natural flavor while helping the drink maintain a thick, velvety consistency. I also like chilling the glasses beforehand so the piña coladas remain frosty a little longer—especially during an Alabama summer.
How to Make the Piña Coladas
Add the ingredients to a blender in the following order:

Coconut cream

White rum
-
Simple syrup
-
Frozen pineapple
-
Ice
Blend for approximately one minute, or until the mixture is completely smooth and creamy. Stop and scrape down the sides of the blender if necessary.
Pour into chilled hurricane glasses, stemless glasses or old-fashioned glasses. Garnish each cocktail with a fresh pineapple wedge and, if desired, a cocktail cherry, sprig of mint or light dusting of toasted coconut.
Add an Ono Island Twist: How to Make a Rum Float
A rum float creates a beautiful layered presentation and adds the warm, caramel-like character of aged rum to the first few sips.
Hold a bar spoon just above the surface of the cocktail with the concave side facing downward. Slowly and gently pour ½ ounce of aged rum over the back of the spoon. The spoon helps disperse the rum so that it settles across the top of the frozen cocktail instead of immediately sinking into it.
Repeat for each glass.
For an attractive presentation, do not stir the cocktail after adding the float. Allow guests to sip through the layer of aged rum or gradually mix it into the drink themselves.

Prepare the Glasses First
Place the glasses in the freezer for 15 to 20 minutes before blending. A chilled glass helps preserve that creamy, frozen texture.
Start with Less Sweetener
Pineapple can vary in sweetness. Begin with slightly less simple syrup if you prefer a brighter, more fruit-forward cocktail. Taste the mixture before pouring and add more only if needed.
Use Frozen Pineapple
Frozen pineapple helps create a naturally thick consistency without relying on too much ice, which can dilute the flavor.
Make a Beautiful Garnish
A small pineapple wedge and mint sprig are simple and elegant. For casual entertaining, I sometimes add a cheerful paper straw or a cocktail pick with fresh pineapple and a cherry.
Serve Immediately
Frozen cocktails are at their best directly from the blender. If I am serving a larger group, I prepare the glasses and garnishes ahead of time so everything is ready when the blending begins.
A Nonalcoholic Ono Island Colada
For guests who prefer a nonalcoholic version, omit both rums and add approximately 4 to 6 ounces of pineapple juice or coconut water. Blend and adjust the consistency with a little more frozen pineapple or ice.
Serving alcoholic and nonalcoholic versions in different glass styles or with different garnishes makes them easy to identify.

One of my favorite things about life on Ono Island is how naturally indoor and outdoor living come together. A porch becomes an evening gathering place. A pool overlooking the water becomes the backdrop for a casual dinner. A boat ride turns into an impromptu sunset get-together with friends and neighbors.
