ONO ISLAND POTATO CASSEROLE

A Golden, Make-Ahead Side Dish for Coastal Gatherings

Some recipes are meant for more than an ordinary weeknight meal. This Ono Island potato casserole is one of them. It begins with buttery Yukon Gold potatoes and finishes with an elegant golden top that looks beautiful on a holiday table, Sunday buffet or dinner shared with neighbors.

The texture is lighter and silkier than traditional mashed potatoes, yet the flavor remains familiar and comforting. Best of all, most of the preparation can be completed a day in advance—something I always appreciate when I am entertaining.

Here on Ono Island, gatherings often unfold with an easy kind of Southern hospitality. Someone brings fresh Gulf seafood, another neighbor arrives with a salad or dessert, and the conversation moves from the kitchen to the porch as the sun begins to set. This casserole fits beautifully into those occasions.


Meredith’s Ono Island Potato Casserole

Serves 8 to 10

Ingredients

  • 3½ pounds Yukon Gold potatoes

  • ⅔ cup half-and-half

  • 1 large egg, separated

  • 2 additional large egg yolks

  • 10 tablespoons unsalted butter, melted and divided

  • 1¾ teaspoons salt, plus more for the cooking water

  • ½ teaspoon freshly ground black pepper

  • A very small pinch of freshly grated nutmeg

  • Butter or nonstick cooking spray for the baking dish

  • Optional: finely chopped fresh chives for serving

Why Yukon Gold Potatoes Work So Well

Yukon Gold potatoes have a naturally rich flavor and smooth texture that make them ideal for this casserole. Their beautiful golden color also complements the delicately browned surface.

Fresh nutmeg adds warmth without making the potatoes taste sweet. Use it sparingly—a very small pinch is all you need.


How to Make the Potato Casserole

1. Prepare the Oven and Baking Dish

Position an oven rack in the center and preheat the oven to 450 degrees.

Lightly butter or grease a 13-by-9-inch baking dish.

2. Cook the Potatoes

Peel the potatoes and cut them into slices approximately ½ inch thick. Place them in a large saucepan and cover with cold water by about 1 inch.

Bring the water to a gentle simmer over medium-high heat. Reduce the heat as needed and continue cooking for approximately 18 to 22 minutes. The potatoes are ready when a small knife passes through the center without resistance.

Drain them thoroughly.

3. Prepare the Cream Mixture

While the potatoes cook, combine the following in a medium bowl:

  • Half-and-half

  • Three egg yolks—the separated yolk plus the two additional yolks

  • Salt

  • Black pepper

  • A tiny pinch of freshly grated nutmeg

Whisk until thoroughly combined and set aside.

4. Rice and Season the Potatoes

Return the empty saucepan to low heat. Using a potato ricer or food mill, process the warm potatoes back into the saucepan in batches.

Gently fold in 8 tablespoons of melted butter. Once the butter is incorporated, add the reserved half-and-half mixture and stir just until the potatoes are smooth and evenly combined.

Avoid vigorous stirring, which can make potatoes dense or gummy.

5. Fill the Casserole Dish

Spoon the potato mixture into the prepared baking dish and spread it into an even layer.

At this point, the casserole may be baked immediately or refrigerated and finished the following day.


How to Create the Golden Topping

Combine the reserved egg white, the remaining 2 tablespoons of melted butter and a small pinch of salt. Beat lightly with a fork until blended.

Pour this mixture evenly over the potatoes. Carefully tilt the baking dish from side to side so the topping lightly coats the entire surface.

Using the flat side of a paring knife, create a series of shallow diagonal grooves across the potatoes. Turn the dish and make another set of grooves in the opposite direction to form an elegant crosshatch or diamond pattern.

The raised edges will become beautifully golden and crisp as the casserole bakes.

Bake Until Golden

Bake at 450 degrees for 25 to 30 minutes, rotating the dish halfway through the cooking time.

The casserole is ready when the surface is golden brown and the patterned ridges have developed lightly crisp edges.

Allow it to rest for approximately 20 minutes before serving. Garnish with finely chopped chives, if desired.


Make-Ahead Instructions

This is one of my favorite features of the recipe.

Prepare the casserole through the point of spreading the potato mixture into the baking dish. Allow it to cool, cover it securely and refrigerate it for up to 24 hours.

When you are ready to serve:

  1. Remove the casserole from the refrigerator.

  2. Add the egg-white and butter topping.

  3. Create the crosshatch pattern.

  4. Bake at 375 degrees for approximately 45 to 50 minutes, or until hot throughout and golden on top.

Because baking dishes and refrigerators vary, check the center before serving to make certain it is completely heated.

Pair It with Gulf Coast Favorites

This potato casserole is especially delicious alongside:

  • Grilled or roasted beef tenderloin

  • Herb-roasted chicken

  • Blackened Gulf fish

  • Grilled shrimp skewers

  • Baked ham

  • Pork tenderloin with a light mustard sauce

  • Fresh green beans or roasted asparagus

Add Fresh Herbs at the End

A light sprinkling of chives adds color and a delicate onion flavor without competing with the buttery potatoes.

Use a Beautiful Baking Dish

Because the casserole goes directly from the oven to the table, I like preparing it in a simple white or navy baking dish. The golden potato topping becomes the centerpiece.

Keep the Menu Relaxed

When one part of the meal can be prepared in advance, everything feels easier. Pair the casserole with a simply seasoned main course, a crisp salad and a dessert that can also be made ahead.
