It is simple enough for everyday snacking, but polished enough to serve on a beautiful board with crackers, toasted bread, pickled vegetables, and chilled white wine.

Orange Beach and Ono Island Style Pimiento Cheese

Ingredients
- 2 cups freshly grated sharp cheddar cheese
- 1 cup freshly grated white cheddar cheese
- 4 ounces cream cheese, softened
- 1/2 cup mayonnaise, preferably Duke’s
- 1 4-ounce jar diced pimientos, drained well
- 1 tablespoon finely grated sweet onion, optional
- 1 teaspoon Dijon mustard
- 1/2 teaspoon Worcestershire sauce
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon garlic powder
- 1/8 to 1/4 teaspoon cayenne pepper, depending on preference
- Fresh cracked black pepper, to taste
- 1 tablespoon finely chopped pickled jalapeños, optional
- 1 tablespoon pickled jalapeño juice or pimiento juice, optional for extra brightness
Instructions
1. Grate The Cheese By Hand
I highly recommend grating the cheese by hand instead of using pre-shredded cheese. Freshly grated cheese gives pimiento cheese a much better texture and a creamier, more homemade finish.
2. Blend The Creamy Base
In a medium bowl, stir together the softened cream cheese, mayonnaise, Dijon mustard, Worcestershire sauce, smoked paprika, garlic powder, cayenne, and black pepper until smooth and well combined.
3. Fold In The Cheese And Pimientos
Add the grated cheddar, white cheddar, and drained pimientos. Gently fold until everything is evenly coated. If you like a little more heat, add the finely chopped pickled jalapeños. If you want a brighter coastal finish, add a splash of jalapeño juice or pimiento juice.
4. Chill Before Serving
Cover and refrigerate for at least one hour. This gives the flavors time to settle together. Before serving, let it sit at room temperature for about 10 minutes so it becomes perfectly spreadable.
How I Like To Serve It
This pimiento cheese is wonderful served with butter crackers, toasted baguette slices, celery, cucumbers, pickled okra, and small sweet peppers. For a more substantial coastal board, I like pairing it with boiled Gulf shrimp, deviled eggs, pecans, olives, and crisp vegetables.
It is also delicious spread onto a sandwich, tucked into a burger, spooned over a grilled hot dog, or served with fried green tomatoes. For an easy appetizer, place it in a pretty bowl, drizzle a touch of good olive oil over the top, and finish with a sprinkle of smoked paprika and cracked pepper.
Coastal Variations
Smoky Ono Island Version
Add 1/4 teaspoon extra smoked paprika and a small pinch of chipotle powder.
Spicy Orange Beach Version
Add chopped pickled jalapeños, cayenne, and a small spoonful of hot pepper relish.
Elegant Porch Board Version
Serve with toasted crostini, pickled okra, olives, pecans, cucumber rounds, and chilled sparkling wine.
Boating Day Version
Make it slightly thicker by reducing the mayonnaise by 1 to 2 tablespoons. It travels better and holds its texture nicely in a cooler.
