Ingredients
- 18 to 24 fresh oysters, scrubbed (in shell)
- 1 stick (8 tbsp) unsalted butter, softened
- 3 to 4 cloves garlic, finely minced
- 2 tbsp chopped parsley
- 1 tsp lemon zest
- 1 tbsp lemon juice, plus more wedges for serving
- 1 tsp Worcestershire sauce
- 1/2 tsp smoked paprika

- 1/3 cup fine breadcrumbs (optional for a golden top)

- Grill or oven
- Grill-safe tray or a bed of rock salt to stabilize shells
- Small bowl for compound butter
Step-by-Step: Grill Method
- Heat the grill: Preheat to high. You want steady, strong heat so the butter sizzles immediately.
- Make the Ono Island butter: In a bowl, mix softened butter, garlic, parsley, lemon zest, lemon juice, Worcestershire, smoked paprika, cayenne, and a few grinds of black pepper. Taste and adjust heat.
