Ono Island Breakfast: Crispy Potato Hash with Baked Eggs and “Perfect Poached” Egg Option

This is my Ono Island-style breakfast when I want something that feels a little coastal-café, but still practical for a real morning. Crispy potato hash is the foundation. From there, you can go two directions: bake the eggs right in the skillet for an easy, elegant finish, or poach eggs for that soft, glossy yolk that makes everything feel restaurant-level.

Ingredients

For the Crispy Potato Hash

  • 1 1/2 pounds Yukon Gold potatoes, diced small (about 1/2-inch)
  • 1 small yellow onion, diced
  • 1/2 red bell pepper, diced
  • 1/2 green bell pepper, diced
  • 2–3 tablespoons olive oil
  • 1 tablespoon butter
  • 1 teaspoon kosher salt, plus more to taste
  • 1/2 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder (or 2 cloves fresh garlic, minced)
  • Pinch of cayenne (optional)
  • 2 tablespoons chopped scallions or chives (for finishing)
  • Optional add-ins: chopped leftover Conecuh sausage, crab, or sautéed shrimp

For Baked Eggs

  • 4–6 large eggs
  • 2 tablespoons heavy cream (optional)
  • 1/2 cup shredded sharp cheddar or crumbled feta (optional)
  • Hot sauce or pepper jelly for serving (optional)

For Poached Eggs (Optional Alternate Finish)

  • 4 large eggs (very fresh is best)
  • 1 tablespoon white vinegar
  • Kosher salt

Ono Island-style flavor note: I like a little “coastal brightness” with this breakfast. A squeeze of lemon over the finished hash, or a spoon of mild pepper jelly on the side, adds a surprising balance with the crispy potatoes.

Step 1: Par-Cook the Potatoes (This Makes the Hash Crispier)

Bring a pot of salted water to a boil. Add diced potatoes and simmer 6–8 minutes, just until the edges are tender but the centers still hold their shape. Drain well. Spread on a towel-lined tray for a few minutes so the steam escapes. Dry potatoes crisp better.

Step 2: Build the Crispy Hash

  1. Preheat oven to 400°F.
  2. Heat a large oven-safe skillet over medium-high. Add olive oil and butter.
  3. Add potatoes in a single layer. Press them down gently. Let them sit undisturbed 4–6 minutes to brown.
  4. Flip and brown another 3–5 minutes.
  5. Add onion and bell peppers. Season with salt, pepper, smoked paprika, garlic powder, and cayenne if using.
  6. Cook 6–8 minutes, stirring occasionally, until vegetables soften and potatoes are deeply golden in spots.

Option A: Baked Eggs in the Hash (My Easiest Favorite)

  1. Use a spoon to make 4–6 small wells in the hash.
  2. Crack an egg into each well. Add a tiny splash of cream on each egg if you want a softer set.
  3. Season eggs with a pinch of salt and pepper. Add cheese if using.
  4. Transfer skillet to the oven and bake 6–10 minutes, depending on how runny you want the yolks:
    • 6–7 minutes: set whites, runny yolks
    • 8–9 minutes: jammy yolks
    • 10 minutes: mostly set
  5. Finish with scallions or chives. Serve immediately.

Option B: Poached Eggs (Restaurant-Style Finish)

If you prefer poached eggs, keep the hash warm on low heat while you poach.

  1. Fill a saucepan with 2–3 inches of water. Bring to a gentle simmer (small bubbles, not a rolling boil).
  2. Add vinegar and a pinch of salt.
  3. Crack each egg into a small bowl or ramekin.
  4. Stir the water in a slow circle to create a gentle swirl, then slide in the egg.
  5. Poach 3–4 minutes for a soft yolk, 4–5 minutes for slightly firmer.
  6. Lift with a slotted spoon and blot on a paper towel.
  7. Top the hash with poached eggs and finish with chives, pepper, and a touch of hot sauce if you like.

Serving Ideas: Ono Island-Style

  • Coastal greens: a quick arugula salad with lemon, olive oil, and shaved parmesan.
  • Fresh side: sliced tomatoes with flaky salt and a drizzle of olive oil.
  • Optional sauce: a light hollandaise spooned over the eggs, or pepper jelly on the side.
  • Seafood upgrade: fold in sautéed Gulf shrimp at the end and keep seasoning slightly smoky and bright.
