ONO ISLAND RED BEANS AND RICE: A GULF COAST KICK RECIPE MY NEIGHBORS LOVE

Ono Island Red Beans and Rice with a Gulf Coast Kick
Ingredients
- 1 lb dried red beans (or small red beans), rinsed
- 1 large yellow onion, diced
- 1 green bell pepper, diced
- 2 celery stalks, diced
- 4–6 cloves garlic, minced
- 12–14 oz smoked sausage, sliced (andouille style if you like more spice)
- 6–8 oz smoked ham or a meaty ham hock (optional but adds depth)
- 2 tbsp tomato paste
- 1 tsp dried thyme
- 2 bay leaves
- 1–2 tsp Cajun seasoning (start lighter, adjust later)
- 1/2 tsp smoked paprika
- 1/4 tsp cayenne (optional, to taste)
- 6 cups low-sodium chicken broth (or a mix of broth + water)
- Gulf Coast kick: zest of 1 lemon + 1 tbsp lemon juice
- Optional depth: swap 1 cup of broth for seafood stock (subtle, not fishy)
- 2 tsp hot sauce (plus more at the table)
- Salt and black pepper, to taste
- Cooked white rice for serving
- Garnish: sliced green onions, chopped parsley
My “don’t skip” notes
- Soak or no soak: If you soak overnight, cook time is quicker. If you do not soak, just plan for a longer simmer and keep broth nearby.
- Brown the sausage: That browned fond is your flavor base.
- Add citrus at the end: Lemon brightens everything, but if you add it too early it can mute the slow-cooked depth.
- Control salt late: Smoked meats vary. Taste near the end, then season.

Instructions
- Optional soak: Cover beans with water by 2–3 inches and soak overnight. Drain and rinse. If you skip soaking, rinse well and proceed.
- Brown the sausage: In a heavy pot or Dutch oven, sauté sliced sausage over medium heat until browned. Remove to a plate, leaving the drippings.
- Build the base: Add onion, bell pepper, and celery to the pot. Cook 6–8 minutes until softened. Stir in garlic for 30–60 seconds.
- Tomato paste moment: Stir in tomato paste and cook 1–2 minutes to deepen it.
- Season: Add thyme, bay leaves, Cajun seasoning, smoked paprika, and cayenne (if using).
- Simmer: Add beans, broth (and optional seafood stock swap), and ham/ham hock if using. Bring to a gentle boil, then reduce to a steady simmer.
- Cook until creamy: Simmer uncovered 1.5–2.5 hours, stirring occasionally. Add a splash of broth/water if it thickens too quickly. Beans should be tender and the pot should look creamy.
- Return sausage: Stir the browned sausage back in during the last 20–30 minutes.
- Make it “Ono Island right”: Turn off heat. Stir in hot sauce, lemon zest, and lemon juice. Taste and adjust salt and pepper.
- Serve: Spoon over rice and top with green onions and parsley.
Gulf Coast variations I love
- Char-grilled lemon: Grill lemon halves and squeeze the warm juice in at the end for a smoky-citrus finish.
- Pickled okra on top: Adds crunch and tang that feels very coastal.
- Crab “kiss” (optional): For a special night, fold in a small handful of lump crab right at the end. Keep it subtle so it stays red beans and rice.
- Spice control: Put hot sauce on the table so everyone can tailor their own bowl.
