Simple Authentic Italian Pasta with Tomato Sauce

If you want a pasta dish that tastes genuinely Italian, the secret is not extra ingredients. It is restraint, good tomatoes, and the timing between pasta water and sauce. This is the version I make when I want something simple, pitch-perfect, and better than most restaurant “marinara.”
Ingredients (Serves 2–4)
- 1 lb pasta (spaghetti, linguine, or rigatoni)
- 1 (28 oz) can whole peeled tomatoes (San Marzano style if you can find them)
- 3 tbsp extra virgin olive oil
- 2–3 garlic cloves, lightly smashed
- Pinch of red pepper flakes (optional)
- Fine sea salt
- 1 small basil sprig (or a handful of leaves)
- Optional finish: Parmigiano-Reggiano (for non-seafood pasta nights)
The Method Italians Use (10–15 Minutes)
1) Start the pasta water first
Bring a large pot of water to a rolling boil and salt it well. The water should taste pleasantly salty. This is where your pasta gets its first layer of flavor.
2) Build a clean, simple sauce
In a wide skillet or sauté pan, warm the olive oil over medium heat. Add the smashed garlic and cook until it turns pale golden and smells sweet, not brown. If you want a tiny bit of heat, add a pinch of red pepper flakes for the last 10 seconds.
3) Add tomatoes the right way
Pour in the whole peeled tomatoes and their juices. Crush them with your hands (best) or a spoon. Add a pinch of salt and the basil sprig. Simmer 8–12 minutes, stirring occasionally, until the sauce thickens slightly and tastes rounded. Remove the garlic cloves and basil sprig before tossing, or leave one basil leaf to melt into the final texture.

4) Cook pasta just shy of done
Drop your pasta in the boiling water. Cook it until it is 1–2 minutes shy of al dente (check the box time, then subtract a minute or two).
5) The authentic step: emulsify with pasta water
Before draining, scoop out 1 cup of starchy pasta water. Transfer pasta directly into the simmering sauce (tongs for long pasta; a strainer for short). Add a splash of pasta water and toss over medium heat for 60–90 seconds. The sauce will cling and gloss the noodles. Add more pasta water a tablespoon at a time until the sauce looks silky and coats each strand.
6) Finish simply
Turn off the heat. Add a small drizzle of olive oil and a few torn basil leaves. Taste for salt. If you use cheese, keep it minimal so the tomatoes stay the star.

- Use whole peeled tomatoes, not sauce. Whole tomatoes have a cleaner flavor and better texture.
- Do not overload with herbs. Basil is enough. Italian sauces are about intention.
- Do not rinse pasta. You need that starch to bind sauce to pasta.
- Cook pasta in the sauce at the end. That final minute is what yields timeless elegance in texture.
- Garlic should be golden, not brown. Brown garlic turns bitter and overwhelms the tomatoes.
Easy Variations (Still Authentic)
- Arrabbiata: Add more red pepper flakes and simmer 2 extra minutes.
- Pomodoro + Butter (very classic): Add 1–2 tbsp butter at the end instead of the final olive oil drizzle.
- Onion version: Swap garlic for 1/2 small onion, halved. Remove the onion before tossing.
