Ono Island Frozen Granita Recipe

This Ono Island-inspired berry granita is my coastal twist on the classic berry granita recipe you shared. The original recipe uses berries, water, sugar, lemon juice, and salt, then relies on freezing and scraping with a fork to create light, icy crystals. It also notes that mint, ginger, lemon zest, prosecco, liqueur, whipped cream, and fresh berries can be beautiful additions.

Serves: 6–8
Prep Time: 15–20 minutes, plus freezing time
Best Served: After boating, by the pool, following grilled seafood, or as a light coastal dessert.

Ingredients

For the Granita

  • 1 pound mixed berries, such as strawberries, raspberries, blueberries, and blackberries
  • 1/2 cup fresh orange juice
  • 1/4 cup fresh lemon juice
  • 1/4 cup fresh lime juice
  • 1/2 cup sugar, or slightly less if the berries are very sweet
  • 1/4 cup water
  • 1 teaspoon lemon zest
  • 1 teaspoon orange zest
  • 2 tablespoons fresh mint leaves
  • Tiny pinch of sea salt
  • Optional: 1/4 cup prosecco, added before freezing for an adult version
  • Optional: 1–2 tablespoons Chambord, elderflower liqueur, limoncello, or Grand Marnier

For Serving

  • Fresh berries
  • Small mint sprigs
  • A splash of chilled prosecco
  • Lightly whipped cream or coconut cream
  • Thin citrus curls
  • Optional: crushed pistachios for texture

Directions

1. Blend the Berries

In a blender, combine the berries, orange juice, lemon juice, lime juice, sugar, water, citrus zest, mint, and sea salt. Blend until smooth and vibrant.

If using prosecco or liqueur, add it after blending and pulse just once or twice. I like keeping the flavor bright and fresh rather than too cocktail-forward.

2. Strain for Elegance

Pour the mixture through a fine-mesh strainer into a shallow glass baking dish. This gives the granita a more refined texture, which I love for entertaining.

3. Freeze and Scrape

Place the dish uncovered in the freezer. After about 45–60 minutes, the edges should begin freezing while the center remains slushy.

Use a fork to scrape the icy edges toward the center. Return it to the freezer. Repeat every 30–45 minutes until the mixture becomes fluffy, crystalline, and spoonable. This usually takes about 3 hours.

4. Serve Beautifully

Right before serving, scrape the granita again with a fork to loosen the crystals.

Spoon into chilled coupe glasses, small bowls, or stemless wine glasses. Top with fresh berries, mint, and a tiny splash of prosecco if desired.

For a more elevated presentation, layer the granita with lightly whipped cream and fresh berries like a coastal parfait.
