This is one of those recipes I come back to often—simple crabmeat salad, lightly dressed, paired with creamy avocado and a bright fruit salsa, all served in delicate bibb lettuce cups.

Crabmeat Salad Bites with Avocado

Ingredients

For the Dressing

  • 2 tablespoons extra-virgin olive oil
  • 2 teaspoons champagne vinegar
  • 1/2 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • Pinch of black pepper
  • 1/2 teaspoon finely grated lemon zest (optional, very light)

For the Crab Salad

  • 12 ounces lump crabmeat, carefully picked through
  • 2 tablespoons mayonnaise
  • 1 ripe avocado, diced

For Serving

  • Butter bibb lettuce leaves (washed and dried)

Instructions

  1. Make the dressing
    Whisk together olive oil, champagne vinegar, Dijon mustard, salt, pepper, and lemon zest.
  2. Create the base
    In a separate bowl, combine 2–3 tablespoons of the dressing with mayonnaise until smooth.
  3. Add the crab
    Gently fold in the crabmeat, keeping the lumps intact.
  4. Finish with avocado
    Carefully fold in diced avocado just before chilling.
  5. Chill
    Cover and refrigerate for 20–30 minutes before serving.

Fresh Fruit Salsa (Light & Refreshing)

This adds a subtle brightness that pairs beautifully with the richness of the crab and avocado.

Ingredients

  • 1/2 cup diced fresh mango or strawberries
  • 1 teaspoon fresh lemon juice
  • Pinch of salt

Instructions

  • Gently combine all ingredients
  • Chill until ready to serve
