The Hash Browns I Make When the Porch Fills Up

Shredded Yukon Golds. Olive oil and butter. Smoked paprika and garlic. One pan, and enough for the porch.

These are the hash browns I make when the porch fills up. I do not want a project before coffee.

On Ono Island, breakfast is often a crowd that arrives in pieces. A skillet cannot keep up when the porch fills up. A sheet pan can. I shred Yukon Golds, toss them with olive oil and a little melted butter, and season them with smoked paprika and garlic powder. That is the whole idea.

If you already make my Ono Island egg roulade with Gulf crab, this is the side that belongs next to it. The roulade is the pretty plate. The hash browns I make when the porch fills up are what people go back for.

Wring them dry. Spread them. Do not pack them.

Wet potatoes steam. Dry potatoes brown. The oil and butter cannot fix a wet pile, and neither can the paprika.

These are the hash browns I make when the porch fills up: one kind of potato, two fats, two dry seasonings.

Ingredients

What I put on the pan

Potatoes

3 pounds Yukon Gold potatoes, scrubbed, skins on

Oil and butter

4 tablespoons extra-virgin olive oil  ·  2 tablespoons unsalted butter, melted

Dry seasonings

1 teaspoon kosher salt  ·  3/4 teaspoon smoked paprika  ·  1/2 teaspoon garlic powder  ·  1/4 teaspoon black pepper

Method

How I make them

1. Heat the oven and shred the potatoes

Heat the oven to 450°F. Shred the potatoes on a box grater or with the shredding disk of a food processor. Rinse them in a colander under cold water, then wring them dry in a clean towel. This is the only fussy part, and it matters.

2. Toss with oil, butter, and the seasonings

Put the dry potatoes in a bowl. Add the olive oil, melted butter, salt, smoked paprika, garlic powder, and pepper. Toss until the shreds look glossy.

3. Bake, flip once, finish

Spread them in an even layer on a lightly oiled rimmed baking sheet. Do not pack them down. Bake 30 to 35 minutes, until the top is browned in spots. Flip with a spatula. Bake 6 to 8 minutes more, until deep gold. Taste. Add a pinch of salt if they need it.

If You Want More

Easy finishes, after they bake

I bake them plain. If the table wants more, I add it at the end. I do not complicate the pan.

Cheddar and chive

Scatter sharp cheddar over half the pan for the last 3 minutes. Chives on top. That is the one I make most.

Gulf crab

Warm a little jumbo lump in butter and lemon and spoon it over one corner. Do not bake the crab. This sits next to the Gulf crab roulade.

A fried egg

Sometimes that is the whole plate.

What I Serve With Them

Leftover hash, chopped and crisped again, is what I fold into the egg bites I keep ready on Ono Island the next day.

Can I use russets?

Yes. They get very crisp. Yukon Golds stay a little more tender in the middle, which I like. Wring russets extra dry.

Why are they pale?

They were wet, or they were packed, or the oven was shy of 450. Dry them. Spread them. Let them brown before you flip.
