Creamed Spinach Eggs Sardou Style: Artichokes, Runny Poached Eggs, and Lemony Pepper Hollandaise
The key is texture control: drain the spinach well, drain the poached eggs briefly, and keep the hollandaise light enough to ribbon, not glue.

Serves 4 (2 stacks per person if you want a generous plate).

- Make creamed spinach first and keep warm
- Make hollandaise second and keep warm
- Poach eggs last and drain briefly
- Assemble immediately for the best texture
If you are hosting, you can poach eggs ahead and re-warm in hot water for 30–45 seconds, then drain and plate.
Ingredients
For the artichokes
- 8 artichoke hearts, or 4–8 artichoke bottoms (drained well)
- 1–2 tbsp butter or olive oil
- Pinch of salt
- Optional: squeeze of lemon
For the creamed spinach (béchamel + shallot)
- 20 oz frozen spinach, thawed, squeezed very dry (or 2 lb fresh, cooked down and squeezed)
- 2 tbsp butter
- 1 small shallot, finely minced
- 2 tbsp all-purpose flour
- 1 1/2 cups whole milk (warm is ideal)
- 1/4 cup heavy cream
- Pinch of nutmeg (optional, but classic)
- Salt and black pepper
- Optional: 1–2 tbsp grated Parmesan for depth
For the poached eggs
- 8 large eggs (very fresh helps)
- 2 tsp white vinegar
- Salt for the water
For lemony pepper hollandaise
- 3 egg yolks
- 1 tbsp water
- 1 tbsp fresh lemon juice, plus more to taste
- 1/2 cup unsalted butter, melted and warm (not sizzling)
- 1/4 tsp kosher salt (adjust to taste)
- Black pepper, to taste (I like it noticeably peppery)
- Optional: pinch of cayenne
Garnish
- Chopped chives or scallion greens
- Lemon zest
- Fresh cracked black pepper
- Optional: smoked paprika for color

- Fine-mesh strainer or clean tea towel (for squeezing spinach)

Step-by-step directions
1) Prep the spinach so it is not watery
- Thaw spinach completely.
- Squeeze aggressively in a clean towel until it is very dry. If it still drips, keep squeezing.
- Set aside. This one step is what prevents a thin, broken creamed spinach.
2) Make shallot béchamel and finish creamed spinach
- In a saucepan over medium heat, melt butter. Add minced shallot and cook 2–3 minutes until soft, not browned.
- Whisk in flour and cook 1 minute to remove the raw taste.
- Slowly whisk in warm milk. Keep whisking until smooth and lightly thickened, about 2–4 minutes.
- Stir in cream, nutmeg (optional), salt, and black pepper.
- Fold in the very dry spinach. Simmer 2 minutes. Add Parmesan if using. Taste and adjust seasoning.
- Keep warm on very low heat. If it thickens too much, add a splash of warm milk.
3) Warm and sear the artichokes
- Drain artichokes very well and pat dry.
- In a skillet, warm butter or olive oil over medium heat.
- Sear artichokes 1–2 minutes per side to add a little color and drive off moisture.
- Season lightly with salt and a small squeeze of lemon if you like.
4) Make lemony pepper hollandaise
- Set a small saucepan over very low heat (or use a double-boiler setup).
- Whisk egg yolks with water and lemon juice until combined.
- Whisk constantly until the yolks thicken slightly and look glossy. Keep the heat gentle so you do not scramble.
- Remove from heat and slowly whisk in warm melted butter in a thin stream until emulsified.
- Season with salt, plenty of black pepper, and a touch more lemon until it tastes bright and a little peppery.
- Keep warm, not hot. If it thickens, whisk in a teaspoon of warm water.
5) Poach eggs so the center stays runny, then drain
- Bring a wide pot of water to a gentle simmer (small bubbles, not a rolling boil). Add a pinch of salt and the vinegar.
- Crack each egg into a small bowl.
- Stir the water once to create a gentle swirl and slide an egg in. Repeat, leaving space.
- Poach 2 1/2 to 3 1/2 minutes for a runny center. Remove with a slotted spoon.
- Drain on a paper towel for 20–30 seconds. This keeps the plate clean and helps the hollandaise cling.
6) Assemble
- Place 2 artichoke hearts (or 1 bottom) on each plate.
- Spoon a generous mound of creamed spinach on top.
- Add a poached egg to each stack.
- Spoon hollandaise over the egg.
- Garnish with chives, lemon zest, cracked pepper, and a whisper of smoked paprika if you want color.
Meredith’s tips for the best texture
- Spinach must be dry. If it is wet, the béchamel turns thin.
- Drain the eggs. A quick drain keeps the hollandaise from sliding off.
- Keep hollandaise warm, not hot. Hot breaks. Cold thickens.
- Make it Gulf Coast. Add a small spoon of lump crab on top of the spinach before the egg, then hollandaise.
