Gulf Coast Gumbo with Sassafras Filé: My Ono Island Style Recipe

When the Gulf air turns crisp and the marina timbers smell like salt and rain, I start craving a pot of gumbo that simmers low and slow. This is my Gulf Coast version, influenced by Louisiana tradition but rooted right here in coastal Alabama. I finish it with sassafras filé powder, the old-school thickener made from dried sassafras leaves that neighbors around Ono Island still like to pick and dry.

Filé tip: I add filé off the heat, after the gumbo is done simmering. If you boil filé, it can turn a little stringy.

Ingredients

For the roux and base

  • 3/4 cup neutral oil (avocado or grapeseed)
  • 3/4 cup all-purpose flour
  • 2 cups yellow onion, finely diced
  • 1 cup green bell pepper, finely diced
  • 1 cup celery, finely diced
  • 4 cloves garlic, minced
  • 2 bay leaves
  • 1–2 tsp kosher salt (to taste)
  • 1 tsp black pepper
  • 1/2 tsp smoked paprika
  • 1/2 tsp dried thyme
  • 1/4–1/2 tsp cayenne (optional)

For the proteins and simmer

  • 12–14 cups seafood stock or chicken stock (warm)
  • 12–16 oz andouille-style sausage, sliced (Conecuh-style works beautifully)
  • 2 lbs Gulf shrimp, peeled and deveined
  • 1 cup sliced okra (fresh or frozen), optional
  • 2 tbsp Worcestershire
  • 1 tsp hot sauce (optional)
  • Cooked white rice, for serving
  • Sassafras filé powder, 1–2 tsp per bowl (or 1–2 tbsp per pot), to taste
  • Sliced green onions and parsley, for serving
  • Lemon wedges, optional

Step-by-step: How I make my gumbo

1) Make a dark roux (the heart of the whole pot)

In a heavy Dutch oven over medium heat, whisk the oil and flour until smooth. Keep whisking and stirring steadily as it darkens from peanut butter to milk chocolate to a deep, glossy brown. This usually takes 20–35 minutes depending on your heat and pot. If it smells burnt, start over. A good roux is intentional, and it sets the tone for everything that follows.

2) Add the trinity and build the aroma

Once your roux is the color you want, add the onion, bell pepper, and celery. Stir until softened, about 8–10 minutes. Add garlic and cook 1 minute more. Stir in bay leaves, salt, pepper, paprika, thyme, and cayenne.

3) Brown the sausage

Push the vegetables to the side and add sliced sausage. Let it render and brown for 5–7 minutes, stirring so it picks up the roux and seasonings.

4) Add warm stock slowly, then simmer

Pour in warm stock a little at a time while stirring, so the roux blends smoothly. Bring to a gentle simmer, then lower the heat and cook uncovered for 60–90 minutes. Stir occasionally. Add okra during the simmer if you’re using it. Finish the simmer with Worcestershire and hot sauce if desired.

5) Add shrimp at the end

Add shrimp in the last 3–5 minutes, just until pink and barely firm. Turn off the heat.

6) Finish with sassafras filé the right way

I finish in bowls, not in the boiling pot. Ladle gumbo over rice, then whisk or stir in filé (start with 1 teaspoon per bowl). It thickens and adds a subtle, earthy fragrance that feels unmistakably Gulf South.

Note: I keep filé for culinary use only. I avoid concentrated sassafras oils and “medicinal” preparations.

My Ono Island serving notes

  • Texture: I want it glossy and spoon-coating, not paste-thick. Filé is easy to overdo, so I add it gradually.
  • Flavor balance: Dark roux + sausage gives depth; shrimp adds sweetness. A squeeze of lemon at the table can brighten the whole bowl.
  • Next-day gumbo: Like so many Gulf Coast dishes, the flavor settles overnight and becomes even more notable the next day.
