Ono Island BBQ Chicken Nachos (Sheet Pan)

Bake: 8–12 minutes
Best chips: Thick-cut tortilla chips so they hold up under the toppings
Ingredients
- 1 large bag thick tortilla chips
- 2 to 3 cups cooked chicken, shredded (rotisserie works beautifully)
- 1/2 to 3/4 cup BBQ sauce (use your favorite)
- 1 1/2 cups shredded cheddar or a cheddar-jack blend
- 1 cup Monterey Jack (or pepper jack if you like extra heat)
- 1/2 cup black beans, rinsed and drained (optional)
- 1/2 cup corn (optional, fresh or thawed)
- 1/3 cup pickled red onions (quick recipe below)
- 1 jalapeño, thinly sliced (optional)
- 2 scallions, sliced
- 1/3 cup chopped cilantro
- 1 lime, cut into wedges
Easy Gulf Coast Queso (optional, but worth it)
- 1 cup queso blanco or white American cheese, chopped
- 1/2 cup half-and-half (or whole milk)
- 1/4 tsp smoked paprika
- Pinch of garlic powder
- 2 tbsp diced green chiles (optional)
Quick Pickled Red Onions (5 minutes)
- 1/2 red onion, thinly sliced
- 1/2 cup apple cider vinegar
- 1 tbsp sugar
- 1 1/2 tsp kosher salt
- 1/2 cup warm water
Optional add-ons
- Diced tomatoes or pico
- Sour cream or crema
- Avocado or guacamole
- Crumbled cotija
- Hot sauce
Instructions
- Heat the oven: 425°F.
- Dress the chicken: Toss shredded chicken with BBQ sauce until glossy but not soupy.
- Build the base: Spread chips on a sheet pan. Scatter half the cheese across the chips.
- Layer: Add BBQ chicken, then sprinkle beans and corn if using. Finish with the remaining cheese.
- Bake: 8–12 minutes, just until melted and bubbling at the edges.
- Finish: Top with pickled onions, jalapeño, scallions, cilantro, and a squeeze of lime.
- Serve: Bring the whole pan to the table and let everyone dig in.
Queso (optional)
- Warm half-and-half in a small saucepan over low heat.
- Add cheese and stir until smooth.
- Season with smoked paprika and a pinch of garlic powder. Stir in green chiles if you like.
Quick pickled onions
- Stir vinegar, sugar, salt, and warm water until dissolved.
