Ono Island Horseradish-Parsley Sauce for Steaks and Prime Rib

When I’m serving steaks or a holiday-style prime rib, I always reach for a bright, briny little “finishing” sauce that wakes everything up without masking the flavor of a great cut. This Ono Island-inspired horseradish-parsley sauce is my go-to. It’s cold, creamy, peppery, and just sharp enough to feel coastal and clean.

If you love cooking in a kitchen that yields timeless elegance and keeps entertaining simple, this is the kind of recipe that earns a permanent spot in the refrigerator. It also travels well, so it’s a smart addition to a hostess basket or a “drop-by” dinner invite in Ono Island and Orange Beach.

“A good horseradish sauce should feel like a cool Gulf breeze at first… and then it lets you know it’s there.”

Why I Love This Sauce on the Gulf Coast

  • It’s pitch-perfect with rich meats like ribeye, strip, tenderloin, and prime rib.
  • It balances coastal cooking — that little bite cuts through buttery sides and beefy flavor.
  • It’s make-ahead friendly, which means less stress when you’re hosting.

Ono Island Horseradish-Parsley Sauce (Creamy + Bright)

Ingredients

  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 2 to 3 tablespoons prepared horseradish, drained (start with 2 and build)
  • 1 packed tablespoon fresh parsley, finely chopped
  • 1 teaspoon Dijon mustard
  • 1 teaspoon fresh lemon juice (or white wine vinegar)
  • 1 small garlic clove, finely grated (optional, but I love it)
  • 1/4 teaspoon kosher salt, plus more to taste
  • Freshly cracked black pepper, to taste
  • Optional: 1 teaspoon minced chives (for an extra “steakhouse” finish)

How I Make It

  1. Stir the base: In a small bowl, whisk together the sour cream and mayonnaise until smooth.
  2. Add the flavor builders: Mix in horseradish, parsley, Dijon, lemon juice, and garlic (if using).
  3. Season: Add salt and plenty of black pepper. Taste and adjust. If you want more heat, add another spoon of horseradish.
  4. Rest: Cover and chill for at least 30 minutes. I like 2 hours if I have time, because the flavors become masterfully blended.

My Serving Notes

  • For prime rib: Serve 1–2 tablespoons per slice on the side so everyone can choose their “bite.”
  • For steaks: Spoon a small dollop on top right before serving, or serve it as a dipping sauce for sliced steak.
  • For sandwiches: This is notable on a leftover prime rib sandwich with toasted bread and a little arugula.

Two Easy Variations I Rotate

1) Lighter, Brighter “Gulf Breeze” Version

  • Swap all sour cream for Greek yogurt
  • Add extra lemon juice and more parsley

2) Steakhouse “Herb + Pepper” Version

  • Add 1 teaspoon chopped chives
  • Add a pinch of smoked paprika
  • Use extra cracked black pepper

How Long It Keeps

Stored covered in the refrigerator, this sauce keeps well for about 4–5 days. If it loosens slightly, I just stir it and taste for salt and lemon again.
