Ono Island Red Snapper: A Fresh Gulf Coast Recipe Inspired by Orange Beach
When I think about winter dinners on Ono Island, I picture that clean salt air drifting off Old River, marina timbers clicking softly in the breeze, and the simple luxury of a fresh filet hitting a hot pan. Orange Beach is the home of red snapper fishing on our stretch of the Gulf Coast, and this is my go-to recipe when I want something bright, coastal, and unfussy.

My Fresh Ono Island Red Snapper Recipe
Pan-Seared Gulf Red Snapper with Brown-Butter Citrus and Coastal Herbs
Makes: 4 servings
Time: 20–25 minutes
Best pan: cast iron or stainless
Ingredients
- 4 red snapper filets (6–8 oz each), skin-on if possible
- Kosher salt + fresh cracked pepper
- 1–2 tbsp olive oil
- 5 tbsp unsalted butter
- 1 small garlic clove, finely grated (optional)
- Zest of 1 lemon + zest of 1/2 orange
- 2 tbsp fresh lemon juice
- 1 tbsp capers, drained
- 1/3 cup chopped herbs (parsley, chives, dill, or basil)
- Charred lemon halves (for serving)
Step-by-step
- Dry the fish well. Pat filets very dry. Season generously with salt and pepper.
- Get the pan hot. Heat olive oil over medium-high until shimmering.
- Sear skin-side first. Place filets skin-side down, press gently for 10 seconds so the skin stays flat. Cook 3–5 minutes (depending on thickness) until the skin is crisp and the fish is mostly opaque up the sides.
- Flip and finish. Flip and cook 60–90 seconds more.
- Brown-butter citrus. Lower heat to medium. Add butter; let it foam and turn lightly golden. Stir in capers, garlic (if using), citrus zests, and lemon juice.
- Herb finish. Turn off heat. Stir in herbs. Spoon sauce over fish immediately.
- Serve. Add charred lemon and extra herbs on top.
Food-safety note: Fish is generally considered done around 145°F, but I like snapper when it flakes easily and still looks silky in the center.
How I Keep Red Snapper “Restaurant-Fresh” at Home
What I look for
- Clean ocean smell: fresh, briny, never “fishy.”
- Firm texture: the filet should spring back when gently pressed.
- Dry surface: extra moisture steams fish and softens the sear.
My simplest side ideas
- Warm olive oil + crusty bread, plus a quick citrus salad
- Lemony rice or orzo with parsley and a pinch of flaky salt
- Charred asparagus, blistered tomatoes, or sautéed greens
