Ono Island Steakhouse Recipe: Prime Ribeye on a Sizzling Cast-Iron Plate (with Steak Butter + 5 Classic Sauces)

When I want a true “steakhouse” experience at home, I don’t start with a fancy trick, I start with the right beef and a hot plan. This Ono Island-inspired method is my go-to for that juicy interior and bold crust, finished on a sizzling cast-iron plate with steak butter so it stays hot and delicious from first bite to last.

The Steakhouse Standard I Aim For

Prime, aged beef I look for USDA Prime when possible, or USDA Choice that’s properly aged. If your butcher offers USDA-aged beef, take it. The texture and flavor are noticeably more refined.
Cut fresh, thick, and well-marbled Thick cuts hold a better interior while you build a real crust. Ribeye is my favorite for peak flavor because that marbling delivers.
High heat + a sizzling finish The magic is a hard sear, then a quick finish, then serving on a very hot plate with butter to keep it restaurant-hot at the table.

Choose Your Cut

  • Ribeye (my favorite): well-marbled, peak flavor, deliciously juicy
  • Cowboy Ribeye: USDA Prime bone-in, thick and juicy with steakhouse drama
  • Filet: ultra-tender, lighter flavor, perfect for sauce lovers
  • Strip: bold beef flavor, slightly leaner than ribeye

Ono Island Steakhouse Seasoning

This blend is designed to taste like a steakhouse crust, not a spice rack takeover.

  • 2 tsp kosher salt
  • 2 tsp freshly cracked black pepper
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp ground mustard
  • Pinch cayenne (optional)

The Main Recipe: Prime Ribeye on a Sizzling Cast-Iron Plate

Ingredients

  • 2 USDA Prime ribeyes (1.25–1.75 inches thick)
  • Neutral high-heat oil (avocado or grapeseed)
  • Ono Island Steakhouse Seasoning (above)
  • 2 cast-iron skillets (one for searing, one plate-sized if you have it, or a preheated cast-iron griddle)
  • Steak Butter (recipe below)
  • Optional toppers (see below): Oscar style, scallops, bacon-wrapped shrimp, crab cake, lobster tail

Step 1: Dry, season, and warm the steak

I pat the steaks completely dry, then season generously on all sides. If I have time, I season and refrigerate uncovered for a few hours to “dry-brine” for better crust and deeper flavor. If not, I season and let them rest at room temperature for 30 minutes while my pans heat.

Step 2: Heat like a steakhouse

I preheat my oven hot (as hot as yours safely goes). Steakhouses use extremely high heat. At home, I mimic that by getting cast iron ripping hot and using the oven to finish cleanly.

Step 3: Sear for a true crust

I heat a cast-iron skillet until it’s very hot, add a thin film of oil, then sear the steak 2–3 minutes per side (and 30 seconds on the edges). I do not move it around. The crust forms from contact and patience.

Step 4: Finish in the oven

After the sear, I move the skillet into the oven to finish. Times vary by thickness, so I rely on temperature:

  • Rare: very red, cool center (pull at 120–125°F)
  • Medium rare: red, warm center (pull at 130–135°F)
  • Medium: pink center (pull at 140–145°F)

Carryover cooking is real. I pull the steak a little early and rest it. Resting keeps it juicy.

Step 5: Serve on a sizzling 500° plate (the showstopper)

While the steak rests, I heat a cast-iron “serving” plate or small cast-iron skillet in the oven until it’s very hot. Then I place the steak on the sizzling plate and top with a generous pat of Steak Butter so it melts dramatically and perfumes the whole bite.

Steak Butter (Maitre D’ Style)

  • 6 tbsp unsalted butter, softened
  • 1 tsp lemon zest
  • 1 tbsp chopped parsley
  • 1 small garlic clove, finely grated
  • 1 tsp Dijon
  • Pinch salt + pepper

Mix and roll into a log in parchment, chill, slice into coins. I put one coin on each steak right as it hits the hot cast iron.

Steakhouse Toppers (Pick One or Go Full “Ono Island”)

Oscar Style Jumbo lump crab + asparagus + béarnaise over sliced steak.
Au Poivre Moment Peppercorn reduction
Seafood Finish Pan-seared scallops or bacon-wrapped shrimp for a surf-and-turf feel.
Classic Indulgence Crab cake with béarnaise.
Celebration Upgrade Lobster tail alongside, finished with butter and lemon.

5 Optional Steakhouse Sauces

1) Béarnaise Sauce (classic)

  • 3 egg yolks
  • 1 tbsp white wine vinegar
  • 1 tbsp water
  • 1 tbsp minced shallot
  • 1 tsp chopped tarragon (plus more to finish)
  • 8 tbsp melted butter (warm, not scorching)
  • Salt + squeeze of lemon

Simmer vinegar, water, shallot, tarragon until reduced by half, cool slightly. Whisk yolks with reduction over gentle heat until thick. Slowly drizzle in butter while whisking. Finish with tarragon, salt, and a touch of lemon.

2) Peppercorn Reduction (au poivre-inspired)

  • 2 tbsp crushed peppercorns
  • 1 tbsp butter
  • 1/2 cup beef stock
  • 1/3 cup cream
  • Optional: splash of brandy (off heat)

Toast peppercorns in butter, add stock and reduce. Stir in cream and simmer until glossy. Season carefully.

3) Au Poivre Sauce (steakhouse bold)

  • 2 tbsp crushed peppercorns
  • 1/4 cup minced shallot
  • 1/2 cup beef stock
  • 1/3 cup cream
  • Optional: brandy or cognac

Sauté shallot, add peppercorns, deglaze (optional brandy), then add stock and reduce. Finish with cream and simmer until thick enough to coat a spoon.

4) Bordelaise (red wine shallot sauce)

  • 1 cup dry red wine
  • 1/2 cup beef stock
  • 1 minced shallot
  • 1 tbsp butter
  • Optional: pinch thyme

Reduce wine with shallot until syrupy, add stock and reduce again. Finish with butter off heat for shine.

5) Maitre D’ Butter (compound butter variation)

  • 6 tbsp butter, softened
  • 1 tsp lemon juice
  • 1 tbsp parsley
  • Salt + pepper

Mix, chill, slice. This is the simplest “sauce” and the most reliable on a sizzling plate.

Wine Pairing (my steakhouse shortlist)

  • Cabernet Sauvignon Caymus Vineyards, CA: the classic pairing for ribeye richness. 
  • Red Blend Rowen Wine Co., Sonoma Valley, CA: plush and approachable with steak butter
  • Napa Cabernet Frank Family Vineyards: structured, bold, and made for Prime beef
My little rule: ribeye wants Cabernet, filet loves béarnaise, and Oscar style deserves a second glass.

This recipe is my idea of an Ono Island “steakhouse night” at home: intentional, a little dramatic, and absolutely worth it.
