Pecan Crusted Fish, Gulf Coast Style: Prosecco-Poached Jumbo Lump Crab, Roasted Corn, and Whiskey-Kissed Corn Cream
One of my favorite things about living near Orange Beach is how quickly a normal weeknight can turn into something that feels like a special occasion. A neighbor will mention a fresh catch, somebody brings pecans, and suddenly we are talking about a dish that tastes like the Gulf Coast in one plate.
This is my elevated, restaurant-inspired recipe for pecan crusted fish topped with prosecco-poached jumbo lump crab, served over roasted corn, asparagus, spinach, melted leeks, and a whiskey-spiked crushed corn cream. It is a showpiece, but it is absolutely doable at home if you follow the timing.

The Recipe
Serves 4. Prep 25–30 minutes. Cook 30–40 minutes.
Ingredients
Fish + Pecan Crust
- 4 fish fillets (6–8 oz each): redfish, snapper, grouper, or thick cod
- 1 cup finely chopped pecans
- 1/2 cup panko breadcrumbs
- 1 tsp smoked paprika
- 1/2 tsp Cajun seasoning (or to taste)
- 1/4 tsp cayenne (optional)
- 1 tsp kosher salt, plus more to taste
- Freshly ground black pepper
- 2 tbsp Dijon mustard
- 2 tbsp mayonnaise (or Greek yogurt for a lighter bind)
- 2 tbsp melted butter
- 1 tbsp neutral oil for the pan
- Lemon wedges for serving
Prosecco-Poached Jumbo Lump Crab
- 10–12 oz jumbo lump crab meat, picked for shells
- 1 cup prosecco (or a dry sparkling wine)
- 1/2 cup seafood stock or low-sodium chicken broth
- 2 tbsp butter
- 1 small shallot, finely minced
- Zest of 1 lemon
- 1 tbsp lemon juice
- Pinch of salt and white pepper
Roasted Corn + Asparagus + Spinach + Melted Leeks
- 2 cups corn kernels (fresh or frozen)
- 1 bunch asparagus, trimmed, cut into 2-inch pieces
- 4 cups baby spinach
- 2 leeks, white and light green parts only, thinly sliced
- 2 tbsp butter + 1 tbsp olive oil
- Salt and pepper
- Optional: pinch of chili flakes
Whiskey-Spiked Crushed Corn Cream
- 1 cup corn kernels
- 1/2 cup heavy cream (or half-and-half)
- 1/2 cup milk
- 1 tbsp butter
- 1–2 tbsp whiskey (start with 1 tbsp)
- Pinch of salt
- Optional: 1 tsp honey for balance
My timing plan
- Start the corn cream first (it holds well).
- Roast corn and asparagus while the leeks melt.
- Cook fish last so the crust stays crisp.
- Poach crab at the very end so it stays tender.
Chef-style tips
- Choose a thick fillet: the crust needs a sturdy base.
- Press the crust: do not sprinkle it loosely. Pack it.
- Keep crab gentle: warm it through, do not “cook” it hard.
- Whiskey goes in late: you want aroma, not bitterness.
I love serving this with a crisp glass of prosecco or a chilled sauvignon blanc, especially when the evening air feels salty and soft.
Step-by-step instructions
- Make the corn cream: In a small saucepan, simmer 1 cup corn with cream, milk, butter, and a pinch of salt for 8–10 minutes. Use an immersion blender (or regular blender carefully) to partially blend into a “crushed” texture. Turn heat to low and stir in 1 tbsp whiskey. Taste and add a second tbsp only if you want a stronger finish. Keep warm.
- Roast the corn and asparagus: Heat oven to 425°F. Toss 2 cups corn and asparagus with olive oil, salt, and pepper. Spread on a sheet pan and roast 12–15 minutes until the corn has a little char and asparagus is tender-crisp.
- Melt the leeks: In a skillet, melt 2 tbsp butter with 1 tbsp olive oil over medium-low. Add sliced leeks and a pinch of salt. Cook 10–12 minutes, stirring often, until soft, sweet, and silky. Add a splash of water if needed.
- Wilt the spinach: Add spinach to the leeks for the last 1–2 minutes, just until wilted. Season lightly.
- Prepare the pecan crust: Mix chopped pecans, panko, smoked paprika, Cajun seasoning, salt, and pepper. In a separate bowl, whisk Dijon and mayonnaise. Pat fish dry, season lightly, then spread a thin layer of the Dijon mix on top of each fillet. Press pecan mixture firmly onto the top. Drizzle with melted butter.
- Cook the fish: Heat a large oven-safe skillet with 1 tbsp oil over medium heat. Sear fish on the bottom side (not the crust side) for 2–3 minutes to set the fillet. Transfer skillet to oven and bake 8–12 minutes depending on thickness, until fish flakes and crust is deeply golden.
- Poach the crab: In a small saucepan, melt 2 tbsp butter, sauté shallot for 1 minute, then add prosecco and broth. Simmer 3–4 minutes. Add lemon zest and a pinch of salt. Gently fold in crab and warm 1–2 minutes. Turn off heat and finish with lemon juice and white pepper.
- Plate: Spoon corn cream on each plate. Add a nest of spinach and melted leeks, then roasted corn and asparagus. Place pecan crusted fish on top and finish with a generous spoonful of prosecco-poached crab. Serve with lemon wedges.
Easy swaps and shortcuts
- No prosecco: use dry white wine and a splash of sparkling water at the end.
- No whiskey: use a tiny splash of bourbon vanilla extract alternative is not recommended; instead, use smoked paprika and a touch of honey for warmth.
- Make-ahead move: corn cream and leeks can be made earlier and gently reheated.
- Spice control: keep Cajun seasoning light in the crust, then let hot sauce or chili oil be optional at the table.
