Thanksgiving on Ono Island and across Orange Beach always feels pitch-perfect to me. The air turns crisp but stays comfortably warm, usually hovering in the 60s during the afternoon with a gentle north breeze that quiets the water along Bayou St. John and Ole River. The island’s sensory palette shifts: briny bay air mingles with longleaf pine, magnolia leaves, fresh straw in the beds, and the first notes of oak smoke from backyard grills. As kitchens wake up, you catch whispers of butter, sage, celery, and a hint of brown sugar from sweet potatoes roasting in the oven.

How I set the coastal table

I like to keep it relaxed. Doors open to the porch, a low playlist, and the game on in the background. Turkey carved on a wood board, cornbread dressing with plenty of aromatics, a bright cranberry relish, and a Sweet Potato Soufflé that always disappears first. A simple centerpiece with palm fronds, sea oats, or olive branches feels natural here and keeps sightlines clear for conversation.

Roast turkey, dressing, and the coastal cadence

For the turkey, I dry-brine with kosher salt and a little brown sugar the night before, then roast over a bed of onion, celery, and carrots. The drippings become a silky gravy with a splash of stock. For dressing, I love a cornbread base with sautéed onion, celery, and plenty of poultry seasoning, moistened with stock and baked until the top is set and golden at the edges.

Simple Southern Recipe: Sweet Potato Soufflé

Ingredients

  • 3 pounds sweet potatoes, peeled and cubed
  • 1/2 cup unsalted butter, melted
  • 1/2 cup granulated sugar
  • 1/4 cup light brown sugar
  • 1/2 cup whole milk (or half-and-half)
  • 2 large eggs, lightly beaten
  • 1 tsp vanilla extract
  • 1/2 tsp kosher salt
  • 1/2 tsp ground cinnamon; pinch of nutmeg

Topping

  • 1/2 cup chopped pecans
  • 1/3 cup brown sugar
  • 3 Tbsp all-purpose flour
  • 3 Tbsp melted butter

Directions

  1. Boil sweet potatoes in salted water until tender, 15–20 minutes; drain well.
  2. Mash while warm with melted butter, sugars, milk, eggs, vanilla, salt, cinnamon, and nutmeg until smooth.
  3. Spread into a buttered 9x13-inch baking dish.
  4. Stir together topping ingredients; scatter evenly over the mash.
  5. Bake at 350°F for 25–30 minutes until set and lightly browned. Rest 10 minutes before serving.

Tip: For extra fragrance, add orange zest to the mash and a few flakes of sea salt to the topping.
