Easy Breakfast Tortilla Wrap: Crispy Potatoes, Soft Eggs, and a Simple Sauce
My trick is to crisp the potatoes first, then cook the eggs low and gentle, and toast the finished wrap so it stays together.
Meredith Folger Amon15-Minute Breakfast Tortilla Wrap
Makes: 2 large wraps
Ingredients
- 2 large flour tortillas (burrito-size)
- 2 cups diced potatoes (small cubes cook fastest), or 2 cups frozen diced hash browns
- 5 eggs
- 2 tbsp butter (or olive oil)
- 1/2 tsp kosher salt, plus more to taste
- Black pepper
- 1/2 tsp garlic powder (optional)
- 1/2 cup shredded cheese (cheddar, Monterey Jack, or a blend), optional but excellent
- Optional add-ins: diced green onion, sautéed bell pepper, a few spoonfuls of salsa, cooked bacon or sausage
Simple “bright” sauce (highly recommended)
- 1/2 cup sour cream or Greek yogurt
- 1–2 tsp hot sauce (to your taste)
- 1 tsp fresh lime or lemon juice
- Pinch of salt and black pepper
Directions
- Crisp the potatoes: Heat a skillet over medium-high. Add 1 tbsp butter (or oil), then potatoes. Season with salt, pepper, and garlic powder if using. Cook 8–10 minutes, stirring occasionally, until golden and crisp.
- Whisk the eggs: While potatoes cook, whisk eggs with a pinch of salt and pepper.
- Cook the eggs gently: Push potatoes to one side of the pan. Add remaining 1 tbsp butter to the open side. Pour in eggs and scramble on low to medium-low until just set and soft (2–3 minutes). Turn off heat.
- Warm tortillas: Warm tortillas in a dry pan for 10–15 seconds per side or microwave briefly so they fold easily.
- Build: Spread a spoonful of sauce down the center of each tortilla. Add potatoes, eggs, and cheese. Add any optional add-ins.
- Wrap and toast: Fold like a burrito. Place seam-side down in a dry skillet over medium heat for 1–2 minutes per side until lightly toasted and sealed.
How I serve it
- Extra sauce on the side
- A spoon of salsa or pico on top
- More black pepper and a squeeze of citrus
Easy variations
- Spicy: Add jalapeños and pepper jack, plus extra hot sauce in the sauce.
- Coastal brunch: Add a little lump crab and a pinch of Old Bay-style seasoning.
- Simple protein: Add cooked sausage crumbles or bacon, then reduce salt slightly.
