This is my Southern coastal interpretation of the famous whole crispy flounder with apricot glaze made iconic at Garibaldi’s. It’s a dish that feels celebratory yet restrained — crisp skin, tender white flesh, and a subtle fruit glaze that enhances rather than overwhelms.
I’ve always admired how Low Country cuisine treats seafood with respect. The fish remains the star, while sweetness, acidity, and texture play supporting roles. Preparation
