This is my Southern coastal interpretation of the famous whole crispy flounder with apricot glaze made iconic at Garibaldi’s. It’s a dish that feels celebratory yet restrained — crisp skin, tender white flesh, and a subtle fruit glaze that enhances rather than overwhelms.

I’ve always admired how Low Country cuisine treats seafood with respect. The fish remains the star, while sweetness, acidity, and texture play supporting roles. This recipe carries that same intention, translating beautifully to Gulf Coast kitchens where fresh flounder is prized and coastal dinners are meant to linger.

Scoring the flounder allows the skin to crisp evenly while protecting the delicate meat. The apricot glaze adds a Lowcountry-style finish — lightly sweet, gently acidic, and brushed on at the very end so the fish remains shatteringly crisp.

Ingredients

  • 1 whole flounder, 1½–2 pounds, scaled, gutted, and trimmed
  • Kosher salt and freshly ground white pepper
  • Rice flour or Wondra flour (for ultra-light crispness)
  • Neutral high-smoke oil (grapeseed or peanut oil)
  • Fresh thyme sprigs
  • Lemon wedges, for finishing

Apricot Glaze

  • ½ cup high-quality apricot preserves
  • 2 tablespoons champagne vinegar or white balsamic
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon grated fresh ginger
  • Pinch of cayenne or Aleppo pepper
  • Sea salt, to taste

Preparation

1. Score the Flounder

Pat the flounder completely dry. Using a sharp knife, score the skin side diagonally every ½ inch, cutting just through the skin, not into the flesh. This allows the fish to crisp evenly and prevents curling.

Season generously with kosher salt and white pepper on both sides.

2. Lightly Dredge

Dust the flounder lightly with rice flour or Wondra flour, shaking off any excess. The coating should be whisper-thin — just enough to encourage crispness without masking the fish.

3. Make the Apricot Glaze

In a small saucepan, gently warm the apricot preserves with vinegar, lemon juice, ginger, cayenne, and a pinch of sea salt. Simmer briefly until smooth and glossy. Remove from heat and keep warm.

4. Pan-Fry to Crisp Perfection

Heat a large, heavy skillet over medium-high heat. Add enough oil to generously coat the bottom. When shimmering, carefully place the flounder skin-side down.

Press gently with a spatula for the first 30 seconds to ensure even contact. Cook until deeply golden and crisp, about 4–5 minutes. Flip carefully and cook the flesh side for 2–3 minutes more.

Add thyme sprigs to the pan during the final minute for a subtle aromatic note.

5. Finish with Apricot Glaze

Transfer the flounder to a serving platter. Using a pastry brush, lightly glaze the fish while it’s hot, allowing the warmth to soften the glaze without dulling the crisp skin.

Serving Suggestions

Serve immediately with lemon wedges and simple accompaniments:

  • Charleston-style rice or stone-ground grits
  • Sautéed local greens or broccolini
  • A chilled, mineral-driven white wine
