When the Gulf air turns cool enough to open the windows and let that salt-brine breeze move through the kitchen, I love a dinner that feels classic and comforting without being fussy. Yorkshire pudding is exactly that for me: dramatic in the oven, crisp at the edges, tender in the middle, and absolutely made for prime rib, roast beef, and rich pan drippings.

I also love how this recipe fits right into the way we entertain along the Gulf Coast. Whether I’m setting a table after a sunset walk in Orange Beach or hosting friends who just toured homes on Ono Island, Yorkshire pudding makes an ordinary roast feel like a special occasion.

My Gulf Coast Yorkshire Pudding (12 muffin-size puddings)

Ingredients

  • 1 cup all-purpose flour
  • 1 cup whole milk (or 2% in a pinch)
  • 3 large eggs
  • 1/2 teaspoon kosher salt
  • 2 tablespoons beef drippings (best) or neutral oil (like avocado or vegetable), plus a little extra if needed
  • Optional: 1/4 teaspoon black pepper

Equipment

  • Standard 12-cup metal muffin tin (metal matters here)
  • Blender or whisk and a bowl
  • Measuring cup with a spout

Timing

  • Prep: 10 minutes
  • Rest: 20–60 minutes (recommended)
  • Bake: 18–22 minutes
  • Total: about 45–90 minutes

Yield

12 tall, muffin-size Yorkshire puddings

Best served immediately, when the edges are at peak crispness.

Step-by-step

  1. Make the batter. In a blender (or bowl), combine flour, milk, eggs, salt (and pepper if using). Blend or whisk until smooth and foamy, about 20–30 seconds.
  2. Rest the batter. Let it sit at room temperature for at least 20 minutes (up to 1 hour). This helps the texture and rise.
  3. Heat the oven and the pan. Place the empty muffin tin in the oven and preheat to 450°F. Let the tin heat for at least 10 minutes once the oven is fully hot.
  4. Add hot fat. Carefully remove the hot tin. Put about 1/2 teaspoon beef drippings (or oil) into each cup. Return the tin to the oven for 2–3 minutes, until the fat is shimmering.
  5. Pour and bake. Working quickly, pull the rack out and pour batter into each cup, filling about halfway. Bake 18–22 minutes until dramatically puffed and deeply golden.
  6. Do not open the oven. Keep the door shut during baking. Opening early can collapse the rise.
  7. Serve immediately. Pop them out and serve right away with pan jus, au jus, or gravy.

My best Gulf Coast serving ideas

  • Prime rib + pan jus with a pinch of flaky salt right before serving
  • Roast beef with a quick peppercorn gravy
  • Holiday roast chicken with a spoonful of pan drippings in each pudding
  • Coastal twist: add a tiny pinch of smoked salt to the batter and serve with a rosemary-scented jus

Troubleshooting (what I check first)

Not rising enough: The pan or fat was not hot enough, the oven temp ran cool, or the batter did not have enough air (blend longer).

Soggy centers: Bake 2–4 minutes longer, and serve immediately. Yorkshire pudding is meant to be crisp-tender, not cakey.

Sticking: Use a metal tin, heat the fat until shimmering, and do not skimp on the drippings or oil.

Make-ahead and reheating

  • Make ahead: Bake fully, cool on a rack, and store airtight for up to 2 days.
  • Reheat: 400°F for 5–7 minutes directly on the oven rack or a sheet pan until re-crisped.
  • Freeze: Freeze baked puddings in a zip-top bag. Reheat from frozen at 400°F for 8–10 minutes.
