Grilled Hamburger Steak & Salisbury Steak
Onion, mushrooms, and gravy — two plated beef classics I cook when a porch dinner needs to feel like home.
When I want a plate that feels like a Gulf Coast diner supper — not a sandwich — I grill a hamburger steak and smother it with onions, mushrooms, and gravy.
On Ono Island, that plate belongs next to mashed potatoes and a simple green. Same family tree as Salisbury steak. Same comfort. Slightly different method. I keep both in my kitchen because some nights want the grill, and some nights want a skillet and a soft simmer.

Hamburger steak means steak, Hamburg-style — not a burger on a bun.
The dish traces back to chopped or ground beef associated with Hamburg, Germany. German immigrants brought that idea into American port cities in the 1800s. By the 1870s, “Hamburg steak” or hamburger steak showed up on U.S. menus as a seasoned ground-beef plate, often with onions — a meal, not a sandwich.
When vendors later put that patty between bread, America got the hamburger. The plated version kept the older name. Salisbury steak, named for Dr. James Salisbury in the 1890s, is the gravy-smothered cousin: usually pan-cooked, often with breadcrumbs and egg in the mix, served under a brown sauce. During World War I, some menus leaned on “Salisbury steak” when German-sounding names felt awkward. Same comfort family. Different kitchen path.

What I use for the grilled hamburger steak
The steaks
1½ pounds ground beef (80/20) · 1 teaspoon kosher salt · ¾ teaspoon black pepper · 1 teaspoon garlic powder · 1 teaspoon onion powder · 1 tablespoon Worcestershire · oil for the grill grates
Onion-mushroom gravy
2 tablespoons butter · 1 large yellow onion, thinly sliced · 8 ounces mushrooms, sliced · 2 tablespoons flour · 2 cups beef broth · 1 tablespoon Worcestershire · 1 teaspoon Dijon (optional) · salt and pepper · a splash of cream or milk if you want it silkier
How I grill the hamburger steak
1. Shape the steaks
Mix the beef with salt, pepper, garlic powder, onion powder, and Worcestershire. Do not overwork it. Form 4 oval steaks about ¾ inch thick. Press a shallow thumb dent in the center so they do not dome. Chill 15 to 20 minutes.
2. Grill
Heat the grill to medium-high and oil the grates. Grill 4 to 5 minutes per side for medium, until the center reaches about 160°F. Rest under foil.
3. Make the gravy and plate
Melt butter in a skillet over medium heat. Cook the onion until soft and golden, 8 to 10 minutes. Add mushrooms and cook until browned. Sprinkle in flour and stir 1 minute. Whisk in broth, Worcestershire, and Dijon. Simmer until it coats a spoon, 5 to 8 minutes. Season. Add a splash of cream if you like. Spoon onions, mushrooms, and gravy over the steaks. Serve with mashed potatoes or rice.

1½ pounds ground beef (80/20) · ½ cup fine breadcrumbs · 1 large egg · 2 tablespoons milk · 1 tablespoon Worcestershire · 1 teaspoon kosher salt · ½ teaspoon black pepper · 1 teaspoon onion powder · ½ teaspoon garlic powder · 1 tablespoon oil or butter for searing
The gravy
2 tablespoons butter · 1 large onion, sliced · 8 ounces mushrooms, sliced · 2 tablespoons flour · 2 cups beef broth · 1 tablespoon Worcestershire · 1 teaspoon Dijon · salt and pepper
How I make Salisbury steak
1. Mix and shape
Stir breadcrumbs, egg, milk, Worcestershire, salt, pepper, onion powder, and garlic powder. Add the beef and mix gently. Form 4 oval patties about ¾ inch thick.
2. Sear
Heat oil or butter in a wide skillet over medium-high. Sear the patties 3 to 4 minutes per side until browned. They do not need to be cooked through yet. Move them to a plate.
3. Build gravy and finish in the pan
Lower the heat to medium. Add butter, then onion, and cook until soft. Add mushrooms and cook until browned. Sprinkle in flour and stir 1 minute. Whisk in broth, Worcestershire, and Dijon. Nestle the patties back into the gravy. Cover and simmer gently 12 to 15 minutes, until the beef reaches about 160°F and the gravy thickens. Taste for salt. Serve with mashed potatoes, buttered noodles, or rice.

Grilled hamburger steak
Seasoned beef only. Char from the grill. Gravy cooked separately and poured over. Best when the weather is good and you want that outdoor flavor.
Salisbury steak
Breadcrumbs and egg in the mix. Sear, then simmer in the gravy. Softer, more diner-plate comfort. Best for a weeknight when everything stays in one skillet.

Is hamburger steak the same as a hamburger?
No. Hamburger steak is a plated ground-beef steak, usually without a bun. The hamburger sandwich came later, when that same style of patty was put between bread.
Can I cook the hamburger steak in a skillet instead of grilling?
Yes. Sear in a hot cast-iron skillet the same timing, then make the gravy in the pan drippings. You will lose grill char and gain fond flavor.
What should I serve with either recipe?
Mashed potatoes, rice, or buttered noodles. Green beans or a simple salad. For another Gulf Coast plate, try Gulf Coast grouper with caper sauce.
