Gulf Coast Crab-Stuffed Grouper
with Gulf Shrimp

Tender grouper or white fish filled with Gulf Coast blue crab, fresh vegetables, lemon and herbs, then finished with plump Gulf shrimp and melted butter.

Living on Ono Island, I am naturally drawn to recipes that feel connected to the water. Whether the boats are returning through Perdido Pass or the evening light is settling across Old River, fresh seafood has a way of turning an ordinary meal into something that feels unmistakably coastal.

This crab-stuffed grouper is my Gulf Coast interpretation of a classic stuffed-fish dinner. I combine sweet Gulf Coast blue crab with onion, red and green bell peppers, celery, thyme and lemon. I then spoon that mixture into fresh grouper or another mild white fish and finish each portion with Gulf shrimp and melted butter.

Choose Your Catch

Grouper or Another Mild White Fish

I use whichever beautiful, fresh white fish looks best at the seafood market. Grouper is wonderful, but this stuffing also works with snapper, flounder, cobia or another mild white fish.

Whole-fish option: Four approximately 1-pound dressed fish, scaled, cleaned, butterflied and deboned.
Fillet option: Four thick grouper or white-fish fillets, approximately 8–10 ounces each. Ask your seafood market to butterfly thick fillets if needed.

Gulf Coast Crab Stuffing

Ingredients

  • 6 tablespoons unsalted butter
  • 1 cup diced sweet yellow onion
  • 1/2 cup diced red bell pepper
  • 1/2 cup diced green bell pepper
  • 1/2 cup diced celery
  • 1 tablespoon minced garlic
  • 1 tablespoon chopped fresh thyme
  • 1/4 teaspoon cayenne pepper
  • 1/2 pound Gulf Coast claw crabmeat, picked clean of shells
  • 1/2 pound Gulf Coast lump crabmeat, picked clean of shells
  • 3/4 cup chopped green onions
  • 1 1/2 cups finely crushed saltine crackers
  • Juice of 1 1/2 lemons
  • 1 large egg, lightly beaten
  • 1/2 cup freshly grated Parmesan cheese
  • Sea salt and freshly ground black pepper, to taste

For Baking and Finishing

  • Four prepared grouper or white fish
  • 8 large Gulf shrimp, peeled and deveined
  • 4 tablespoons melted butter, for basting
  • 1 lemon, cut into wedges
  • Optional Gulf Coast seafood or Creole seasoning
  • Chopped parsley or green onion, for finishing

Build the Flavor

How I Prepare the Crab Stuffing

Step One — Prepare the Oven I preheat the oven to 400°F and line one or two rimmed baking sheets with foil or parchment paper.
Step Two — Sauté the Vegetables In a large skillet, I melt the six tablespoons of butter over medium heat. I add the yellow onion, red and green bell peppers and celery, then sauté for 6–8 minutes until tender and translucent.
Step Three — Add the Aromatics I add the garlic, thyme and cayenne and cook for one additional minute. I season the vegetables lightly with salt and pepper, remove the skillet from the heat and let the mixture cool for about 10 minutes.
Step Four — Fold in the Crab Once the vegetables have cooled, I gently fold in the claw crabmeat, lump crabmeat, green onions, crushed saltines, lemon juice, beaten egg and Parmesan. I mix only until combined so the beautiful lumps of crab remain intact. The stuffing should be moist enough to hold together without feeling wet or compacted.

Stuff, Baste and Bake

Bringing Everything Together

1. Season the fish. I pat the fish dry and season the inside and outside lightly with salt, pepper and, if desired, a touch of Gulf Coast seafood seasoning.
2. Add the stuffing. I spoon the crab mixture into each butterflied fish without packing it too tightly. When using fillets, I place the stuffing inside a butterflied fillet or mound it over the fish and gently fold the thinner side around it.
3. Begin baking. I arrange the stuffed fish on the prepared baking sheet and bake it for 10 minutes.
4. Add butter and Gulf shrimp. I open the oven, baste the fish generously with melted butter and place two Gulf shrimp over each portion. Adding the shrimp partway through baking helps them remain plump and tender.
5. Finish and serve. I return the pan to the oven for another 8–15 minutes, depending on the thickness of the fish. I finish each serving with fresh lemon juice and a sprinkle of parsley or green onion.

Use Temperature, Not Time Alone

Fish thickness varies, so I use a food thermometer rather than relying only on the clock. The fish should reach 145°F in its thickest portion and flake easily. Because the filling contains egg, I also make sure the center is completely set; USDA guidance lists 160°F for egg dishes.

A Dinner That Feels Like the Coast

This is the kind of meal I love for an Ono Island evening: something beautiful enough for guests, yet relaxed enough to serve after a day of boating or fishing. The crab stuffing can be assembled ahead of time, leaving only the fish to stuff, baste and bake before dinner.

I especially love the combination of claw and lump crabmeat. The claw meat contributes a deeper crab flavor, while the lump crab provides those delicate, impressive pieces that make the filling feel abundant and special.

Meredith’s Gulf Coast Tips

Small Details That Make a Difference

Use the freshest fish available. Grouper is wonderful, but a beautiful local white fish is always preferable to a fish that has been sitting too long.
Protect the lump crab. I fold rather than stir so the larger pieces remain intact.
Do not overpack the fish. A loosely filled fish cooks more evenly and keeps the stuffing light.
Add the shrimp later. Placing the shrimp on the fish after the first 10 minutes helps prevent overcooking.
Keep the seasoning balanced. Crab and Parmesan both contribute salt, so I taste the vegetable mixture before adding much additional seasoning.
