Living on Ono Island has made me appreciate recipes that do not compete with the setting. When the water is glimmering beyond the porch and the boats are making their way home, the best food often feels effortless: fresh seafood, something cold to drink and a dish that was prepared ahead of time so everyone can linger a little longer.
West Indies Salad is exactly that kind of dish. It is cool, bright and elegant without being fussy. There is no mayonnaise and no heavy sauce to conceal the crab. The sweetness of the Gulf Coast blue crab remains the centerpiece, lifted by finely chopped onion, apple-cider vinegar and ice-cold water.

A Mobile Bay Story
How a Coastal Classic Began
The story of West Indies Salad begins in 1947 with Mobile restaurateur Bill Bayley. At his restaurant on Dauphin Island Parkway, chilled marinated crab and saltine crackers became a welcoming first taste for guests while they waited for their meals. The dish was simple, memorable and unmistakably tied to the abundance of the Alabama coast.
Bayley’s recipe was later printed in the Junior League of Mobile’s Recipe Jubilee, helping preserve it as one of the region’s signature dishes. I love that its legacy did not come from complicated technique. It came from understanding that beautiful local crab needs very little adornment.
