This is the Gulf grouper I plate with Parmesan risotto, asparagus, and citrus beurre blanc. Risotto first. Sauce while it cooks. Fish last.

On Ono Island, this is the kind of dinner I plate when I want fine-dining flavor with a laid-back night at home. Arborio rice goes creamy with Parmesan. Asparagus stays bright. Gulf grouper gets a hard sear. A citrus beurre blanc spoons around the bowl, glossy, not broken. That is Search The Gulf cooking.

For a night with grill marks and peas, make the grilled Gulf grouper I plate with pea and pancetta risotto. For a simpler night, go back to Gulf Coast grouper with caper sauce.

Meredith’s Rule

Warm shallow bowls. Keep the beurre blanc warm, never boiling. Cook the fish last.

The Gulf grouper I plate with Parmesan risotto is half cooking and half timing. The sauce wants to stay glossy. The fish wants the hottest pan at the end.

The Recipe

The Gulf grouper I plate with Parmesan risotto, asparagus & citrus beurre blanc

About 45 to 50 minutes  ·  Serves 2

Four parts. One shallow bowl. Start the risotto, then make the sauce while it cooks.

Ingredients

What I use

Citrus beurre blanc

1/4 cup dry white wine  ·  2 tablespoons fresh orange juice  ·  1 tablespoon fresh lemon juice  ·  1 small shallot, minced  ·  6 tablespoons cold unsalted butter, cubed  ·  kosher salt  ·  white pepper or black pepper

Parmesan risotto

3/4 cup Arborio rice  ·  1 small shallot, minced  ·  1/3 cup dry white wine  ·  about 3 cups warm chicken or fish stock  ·  2 tablespoons butter  ·  1/2 cup grated Parmesan  ·  kosher salt and black pepper

Asparagus

1 bunch asparagus, trimmed  ·  olive oil  ·  kosher salt  ·  lemon zest

Gulf grouper

2 thick Gulf grouper fillets (about 6 oz each)  ·  olive oil  ·  kosher salt and black pepper  ·  fresh thyme or parsley  ·  lemon  ·  microgreens to finish, optional

Method

How I make the Gulf grouper I plate with Parmesan risotto

1. Stir the risotto

Soften the shallot in a little of the butter. Add the rice and toast 1 minute. Deglaze with the wine. Add warm stock a ladle at a time, stirring, until creamy and just al dente, about 18 minutes. Fold in the remaining butter and the Parmesan. Taste for salt and pepper. Keep it loose enough to spoon.

2. Make the citrus beurre blanc

While the risotto cooks, or just after, simmer the wine, orange juice, lemon juice, and shallot until reduced to about 2 tablespoons. Take the pan off the heat. Whisk in the cold butter a few cubes at a time until the sauce is glossy. Season with salt and white pepper or black pepper. Keep it warm. Do not let it boil.

3. Cook the asparagus

Toss the trimmed asparagus with olive oil and salt. Roast or pan-sear until bright and just tender. Finish with lemon zest. Do not let it go limp.

4. Sear the fish and plate

Pat the fillets dry. Oil and season with salt, pepper, and a little thyme or parsley. Grill or sear in a ripping-hot pan 3 to 4 minutes per side until the fish flakes. Finish with lemon. Spoon risotto into a shallow bowl. Set the asparagus beside or over it. Nestle the grouper on top. Spoon the citrus beurre blanc around the plate. Finish with microgreens if you have them.

If You Want a Swap

Keep the plate. Change one piece.

Snapper works the same way as grouper. No orange? Lemon only is fine. I would not skip the cold butter. That is what makes the beurre blanc glossy. For grill marks and peas instead of asparagus, go to the grilled Gulf grouper I plate with pea and pancetta risotto.

Can I use frozen asparagus?

Yes. Thaw it and dry it well, or roast from frozen a couple of extra minutes. Pull it while it is still bright. Frozen asparagus on the Gulf grouper I plate with Parmesan risotto should not go limp.

Can I make beurre blanc ahead?

I would not finish it ahead. You can reduce the wine, juices, and shallot earlier. Whisk in the cold butter close to plating, then keep it warm, not boiling.

Snapper instead of grouper?

Yes. Same thickness, same hot pan, same timing. Snapper takes the citrus beurre blanc as well as grouper does.
