Gulf Coast Seafood Gumbo Recipe (Dark Roux, Shrimp, Crab, Oysters)

Guided by the Gulf. Grounded by Integrity.

Gulf Coast gumbo is one of those recipes that feels like a snapshot of the coast: briny air, a steady simmer, and that unmistakable aroma that gathers everyone into the kitchen. When I make seafood gumbo, I keep the process classic: a patient, dark roux; the trinity; a gentle simmer; and seafood added at the end so it stays tender.

If you are reading this from Orange Beach or Gulf Shores, you already know how quickly a good gumbo can turn into an “everyone brings a bowl” kind of evening. I love recipes like this because they match the Gulf Coast lifestyle I write about on www.searchthegulf.com: unhurried, welcoming, and built around quality details.

“The secret is not a secret at all: a dark roux, a steady stir, and seafood that hits the pot at the very end.”

What Makes This Gulf Coast Seafood Gumbo Work

  • Dark roux: Deep color brings depth without needing heavy ingredients.
  • Warm stock: Helps the roux stay smooth and prevents lumps.
  • Seafood timing: Shrimp and oysters cook fast, so they go in last.
  • Flexible finish: Filé powder (sassafras) is optional, but it adds a beautiful, traditional finish at the table.

Quick coastal note: If you love cooking and coastal living, you will probably also enjoy browsing the local lifestyle side of www.searchthegulf.com, especially the pages tied to Boating and waterfront neighborhoods like Ono Island.

Gulf Coast Seafood Gumbo Recipe

Ingredients

Roux

  • 1 cup neutral oil (avocado or canola)
  • 1 cup all-purpose flour
```
Gumbo Base
  • 2 cups yellow onion, diced
  • 1 cup celery, diced
  • 1 cup green bell pepper, diced
  • 4 cloves garlic, minced
  • 2 bay leaves
  • 2 tsp kosher salt, plus more to taste
  • 1 tsp black pepper
  • 1 1/2 tsp smoked paprika
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1/2 tsp cayenne (optional)
  • 6 to 7 cups seafood stock, warmed
  • 1 lb andouille sausage, sliced (optional)
Seafood Finish
  • 1 lb shrimp, peeled and deveined
  • 8 oz lump crab meat
  • 8 oz oysters with liquor (reserve the liquor)
  • 2 tsp Worcestershire sauce
  • Hot sauce to taste
To Serve
  • Cooked white rice
  • Sliced green onions
  • Filé powder (sassafras), optional
Step-by-Step Instructions
  1. Make the dark roux: In a heavy Dutch oven over medium heat, whisk oil and flour until smooth. Stir constantly 30 to 45 minutes, until the roux is dark chocolate in color. If it smells sharp or looks like it may scorch, lower the heat and keep stirring.
  2. Add the trinity: Stir in onion, celery, and bell pepper. Cook 8 to 10 minutes until softened. Add garlic and cook 1 minute.
  3. Season and simmer: Add bay leaves, salt, pepper, paprika, thyme, oregano, and cayenne (optional). Slowly whisk in warm seafood stock. Add sliced sausage if using. Bring to a gentle simmer and cook 60 to 75 minutes, stirring occasionally.
  4. Finish with seafood: Stir in Worcestershire and hot sauce. Add shrimp and cook 2 to 3 minutes. Add crab and oysters (plus a splash of reserved oyster liquor) and cook 2 minutes more, just until shrimp are pink and oysters are plump.
  5. Serve: Remove bay leaves. Taste and adjust seasoning. Ladle over rice and garnish with green onions. If using filé powder, sprinkle a small pinch at the table (not in the pot) to avoid stringiness.
My Best Gumbo Tips
  • Roux patience pays off: A darker roux gives you that signature depth. Keep the heat steady and the stirring constant.
  • Seafood goes last: Overcooked shrimp turns firm fast, and oysters can tighten. Add them right before serving.
  • Make-ahead strategy: I like to make the gumbo base (through the simmer) a day early, chill it, skim any excess fat, then reheat and add seafood right before serving.
  • Thicker or looser: Simmer uncovered for a thicker gumbo; add a splash of stock for a lighter bowl.
  • Optional okra: If you like okra, sauté it separately and add it during the simmer so it helps naturally thicken.
Serving Ideas That Feel Very Gulf Coast
I serve seafood gumbo over rice, and if the table wants to lean fully traditional, I set out filé powder, hot sauce, and a simple potato salad on the side. It is the kind of meal that pairs well with a slow evening and stories that drift from the kitchen to the porch.
A Coastal Hosting Note
Gumbo is a perfect “welcome to the coast” meal for new homeowners settling into Ono Island or anyone spending more weekends down here. If you are dreaming about a place that supports the Gulf lifestyle, start with browsing www.searchthegulf.com and then call or text me when you want a strategy that fits your respective goals.
Storage and Reheating
  • Refrigerator: Store up to 3 days. Reheat gently so the seafood stays tender.
  • Freezer: Freeze the base (without seafood) up to 3 months. Thaw, reheat, then add shrimp, crab, and oysters right before serving.
  • Food safety: Keep seafood cold until you are ready to add it, and do not let finished gumbo sit out for extended periods.
“Gumbo has a way of turning an ordinary night into a Gulf Coast night.”
If this recipe helped, drop me a quick note and tell me what seafood you used. When you are ready to pair Gulf Coast living with Gulf Coast cooking, I would love to help you map out the best next step on www.searchthegulf.com.
