Ono Island Egg Roulade with Gulf Crab
The brunch I make when the porch is full and I still want the table to feel calm. Spinach, Gruyère, and jumbo lump crab, rolled in one pan.
I have a soft spot for a brunch that looks like I planned it for days, when the truth is I had thirty minutes and a rimmed baking sheet.
That is this egg roulade. It is the French idea I love—eggs, spinach, Gruyère—finished the way we eat on Ono Island. Jumbo lump Gulf crab. Lemon zest. Chives. One roll, sliced at the table, and nobody is waiting on a poached egg.
When a buyer asks me what weekend life actually feels like here, I do not start with square footage. I start with the porch. Coffee. The water moving. A plate that is pretty without being fussy. This is that plate.
If you already make my Ono Island Eggs Benedict, keep that one for a quieter morning. This roulade is the one I reach for when the guest list is eight or ten and I still want to sit down with everyone.
The parchment is not optional.
Line the pan with an overhanging sheet, grease the parchment, and you can roll the eggs into a tight cylinder the moment they come out. Skip that step and you will have a very nice frittata. Delicious. Not a roulade.
The second rule: squeeze the spinach until it is almost dry in your hands. Water is the enemy of a clean roll. The third: the crab goes on after the eggs set, with the cheese. I want it warm and sweet, not baked hard.
Why I keep coming back to a sheet-pan roulade
I pay attention to how a meal feels in a house. A brunch that keeps the cook in the kitchen is a missed porch.
This one bakes in about nine minutes. It slices clean. It holds on a platter while people pour coffee and wander out to the water. Gruyère is the cheese I want here: nutty, quiet, a little luxurious. It does not fight the crab. If you use a louder cheese, you will taste the cheese and lose the Gulf.
I buy jumbo lump when I can find it, and I pick it through myself. One piece of shell on a pretty plate is the kind of thing I notice. You will too.
Ono Island egg roulade with spinach, Gruyère, and Gulf crab
About 30 minutes · Serves 8 to 10
A classic egg roulade, finished with jumbo lump crab, lemon, and chives. This is the version I make for a weekend table on Ono Island.
Eggs
12 large eggs · 1 garlic clove, minced to a paste · 1/4 teaspoon table salt · 1/8 teaspoon pepper · zest of 1 lemon
The tender crumb
1/4 cup half-and-half · 2 tablespoons all-purpose flour
The Ono finish
8 ounces frozen chopped spinach, thawed and squeezed very dry · 6 ounces jumbo lump Gulf crab, picked over for shell · 4 ounces Gruyère, shredded (about 1 cup) · 2 tablespoons finely chopped chives · a small pinch of smoked paprika, if you like a quiet warmth
Two things I never skip
First, the parchment. Grease the pan, line it with a sheet that hangs over the long sides, then grease the parchment too. That overhang is how you roll and how you lift.
Second, the spinach. Wrap the thawed spinach in a clean towel and squeeze until almost no water comes out. Wet spinach makes a soggy roll, and a soggy roll will not slice into those neat rounds I want on a platter.
How I make it
1. Heat the oven and dress the pan
Set a rack in the middle and heat the oven to 375°F. Grease a rimmed baking sheet with vegetable oil spray. Line it with an overhanging sheet of parchment, then grease the parchment.
2. Make a smooth egg batter
Whisk the eggs, garlic, salt, pepper, and lemon zest in a large bowl. In a second bowl, whisk the half-and-half and flour until no dry pockets remain, then slowly whisk that into the eggs until the mixture looks even. The flour is what keeps the sheet tender enough to roll without tearing.
3. Bake until just set
Pour the eggs into the prepared pan. Sprinkle the dry spinach over the top in an even scatter. Bake until the eggs are just set, about 9 minutes, rotating the pan halfway through. You want them barely firm, not browned.
4. Add the crab and cheese, then roll
Take the pan out and work quickly. Sprinkle the Gruyère over the hot eggs, then the crab, then the chives and a pinch of paprika if you are using it. Using the parchment, roll the egg over itself into a tight cylinder. The cheese melts as you roll and helps it hold. Use the parchment to move the roulade to a cutting board. Slice and serve.

What I put on the table with it
I slice it thick enough that you see the spiral. A little extra chive on the platter. Lemon wedges. That is enough.

If you cannot find jumbo lump
Use the best lump you can get and keep the pieces large. Do not shred it into salad. If crab is not in the house, chopped Gulf shrimp, warmed in a little butter and lemon, can stand in. I still add them after the bake, the same way I add the crab.
Without seafood, it is still a beautiful spinach and Gruyère roulade, and I have served that version on a quieter Sunday. The island version, to me, wants the crab.

Egg roulade, answered simply
Can I make an egg roulade ahead?
I like it best the hour it is rolled. You can bake the egg sheet, cool it, and roll it just before serving if you warm the cheese first. I would not refrigerate a finished roll overnight if I want those clean slices.
Why did my roulade tear?
Usually the eggs baked too long, or the parchment had no overhang. Pull them when they are just set. Roll while they are hot, using the paper, not your hands on the egg.
Can I use fresh spinach?
Yes. Wilt it, cool it, chop it, and squeeze it dry the same way. Frozen is what I keep because it is already chopped and it behaves.
What should I drink with it?
Something bright and not too sweet. Champagne if the morning is a celebration. A dry rosé if it is just a good Saturday on the island. Coffee, always.
