Ono Island Herb-Forward Mahi-Mahi with Basil, Parsley, Garlic, and a Lemon Pan Sauce

This is the kind of dinner I lean on when I want something that feels like Ono Island living in a skillet: simple, bright, herb-forward, and finished with a lemony pan sauce you will want to spoon over everything. If you can sauté onion and garlic until they turn sweet and translucent, you can make this mahi-mahi. I like serving it with rice, roasted baby potatoes, or a crisp salad and calling it a night.
My rule with fresh fish: keep the seasoning clean, let the herbs stay fresh, and build flavor in the pan sauce instead of burying the fish.

Gulf Coast tip: If you are shopping around Orange Beach, ask for center-cut mahi portions so the thickness cooks evenly.
Ingredients
For the mahi-mahi
- 2–4 mahi-mahi fillets (about 6 oz each)
- 1 1/2 tsp kosher salt (adjust to taste)
- 1/2 tsp black pepper
- 1 tsp paprika (sweet or smoked)
- 2 tbsp olive oil
- 1 tbsp butter (optional but recommended for the finish)
For the onion-garlic herb pan sauce
- 1 small yellow onion, finely diced
- 4–6 garlic cloves, lightly smashed or sliced
- 1/4 tsp crushed red pepper (optional)
- 1/3 cup dry white wine or seafood stock (or chicken stock)
- Zest of 1 lemon
- 2–3 tbsp fresh lemon juice
- 1 tbsp capers, drained (optional but very Gulf Coast)
- 2 tbsp olive oil (in addition to what you sear with, as needed)
- 2 tbsp butter, cut into small pieces
- 1/4 cup chopped fresh parsley
- 2–3 tbsp chopped fresh basil
- Optional add-ins: halved cherry tomatoes, a pinch of oregano, or a spoon of grated Parmesan for the table
How I Make It
1) Prep the fish
Pat the mahi-mahi dry with paper towels. Season both sides with salt, pepper, and paprika. Let it sit while you get the pan hot. Dry fish sears better and stays tender.
2) Sear the mahi-mahi
Heat a large skillet over medium-high heat. Add 2 tablespoons olive oil. When the oil shimmers, lay the mahi in and do not move it for 3–4 minutes. Flip and cook another 2–4 minutes, depending on thickness. Transfer fish to a plate.
I pull mahi when it flakes easily and looks opaque at the thickest part. If you have a thermometer, 137–140°F gives you a juicy finish.
3) Build the onion-garlic base
Lower heat to medium. Add a touch more olive oil if the pan looks dry. Add the diced onion and cook 4–6 minutes until soft and glossy. Add garlic and crushed red pepper and cook 45–60 seconds, just until fragrant.
4) Deglaze and reduce
Pour in the wine or stock and scrape up the flavorful bits. Simmer 2–3 minutes, then add lemon zest, lemon juice, and capers. Let it reduce until it looks slightly syrupy around the edges.
5) Finish the sauce with butter and herbs
Reduce heat to low. Whisk in the butter a few pieces at a time until the sauce turns silky. Stir in parsley and basil at the very end so they stay bright and fresh.
6) Return the fish and serve
Nestle mahi-mahi back into the pan for 30–60 seconds to warm through. Spoon the onion-garlic herb sauce over the top. If you are using cherry tomatoes, toss them in right at the end so they soften but keep their shape.
