This is the grilled Gulf grouper I plate with pea and pancetta risotto. Sauce first. Risotto next. Fish last.

On Ono Island, I want a dinner that looks intentional without a restaurant kitchen. Pancetta renders in the risotto. Peas stay bright. Gulf grouper gets real grill marks. A smooth roasted red pepper sauce pools to one side. That is Search The Gulf cooking.

Warm shallow bowls. Sauce pourable, not paste. Do not move the fish until the marks set.

The Recipe

The grilled Gulf grouper I plate with pea & pancetta risotto

About 45 minutes  ·  Serves 2

Ingredients

What I use

Roasted red pepper sauce

2 large roasted red peppers (jarred, drained, or fresh roasted and peeled)  ·  1 small shallot, minced  ·  1 garlic clove  ·  2 tablespoons olive oil  ·  1 teaspoon sherry vinegar or lemon juice  ·  pinch of smoked paprika  ·  kosher salt

Pea & pancetta risotto

3/4 cup Arborio rice  ·  2 ounces pancetta, small dice  ·  1 small shallot, minced  ·  1/3 cup dry white wine  ·  about 3 cups warm chicken or fish stock  ·  1/2 cup English peas (fresh or frozen)  ·  2 tablespoons butter  ·  1/4 cup grated Parmesan  ·  kosher salt and black pepper

Gulf grouper

2 thick Gulf grouper fillets (about 6 oz each)  ·  olive oil  ·  kosher salt and black pepper  ·  fresh thyme or parsley  ·  lemon  ·  microgreens or chives to finish

Method

How I make the grilled Gulf grouper I plate with pea & pancetta risotto

1. Blend the sauce

Blend the peppers, shallot, garlic, olive oil, sherry vinegar or lemon, smoked paprika, and salt until very smooth. Warm gently. It should pour, not sit like paste. Thin with a spoon of water if it needs it.

2. Stir the risotto

Render the pancetta until crisp. Soften the shallot in the fat. Add the rice and toast 1 minute. Deglaze with the wine. Add warm stock a ladle at a time, stirring, until creamy and just al dente, about 18 minutes. Fold in the peas, butter, and Parmesan. Taste for salt and pepper. Keep it loose enough to spoon.

3. Mark the fish and plate

Pat the fillets dry. Oil and season with salt, pepper, and a little thyme or parsley. Grill or sear in a ripping-hot pan 3 to 4 minutes per side until the marks set and the fish flakes. Finish with lemon. Spoon risotto into a shallow bowl. Nestle the grouper on top. Pool the red pepper sauce to one side. Finish with a tangle of microgreens or chives.

If You Want a Swap

Keep the plate. Change one piece.

Snapper works the same way as grouper. So does Ono Island mahi-mahi. No pancetta? A little bacon, rendered the same way, is fine. I would not pile herbs on the sauce. The color is the point.
